This is a tasty white sauce to use on Mexican dishes.

Steps:
- Place bell pepper, jalapeno pepper, and onion in the bowl of a food processor; puree until smooth. Stir together 4 teaspoons of this puree with the mayonnaise, and vinegar in a small bowl. Season with pepper, garlic powder, and cumin. Cover, and refrigerate for at least 3 hours to allow flavors to develop.

TEQUILA ROSE - CREAMY ALCOHOL LIQUEUR
At our last big family get-together, we sampled something like this someone bought from the Liquor Store. Yum. I havn't tried this recipe yet; but I like home-made Bailey's, so I'm expecting to like this one too.

- Measure all ingredients into a blender.
- Blend until mixed and smooth. Store in refrigerator until serving time.
- I think, like the homemade Bailey's recipes, likely keeping chilled a week will allow the flavors to blend. All measurements are a starting point. If it needs more or less of something then adjust as needed.

BAJA BLUE JELLO SHOTS
SO good. The beautiful color of blue for the sea, tropical in taste and sure to please. Made these up for my neice's Bachelorette party. Number of servings depends on the size of your cups; I used 2 oz cups, so mine made about 20. Sugar free versions of jello work just fine as well!

Steps:
- Place your jello shot cups on a cookie sheet (that you know will fit in your fridge). This will make for easy transport.
- Place 2 cups VERY hot water (but not boiling) in a pitcher.
- Slowly pour in contents of jello packages while stirring constantly.
- Stir until completely mixed (about 2 minutes).
- Add in the remaining ingredients and stir well.
- Pour into plastic jello shot cups or you can use a 9x13 pan if you don't have the cups.
- Chill 4 hours or more until set.
- If you are using a cake pan, simply cut the set jello into squares and place on individual cupcake cups for serving.
- If you want to get silly, top each one with a small dollop of whip cream just before serving!

This recipe was created as part of a signature drink challenge. I decided to make a shot and a cocktail using some of the same ingredients. This delicious after dinner cocktail, is perfect for sipping. Take it out onto the deck to enjoy while you sit back and watch the sun go down after a busy day. You'll only need the one... I hope you will enjoy.

- Put your ice cubes into a chilled glass. Then add the coconut rum, then the Espresso Baileys and the Baja Rosa.
- Next slowly pour in milk. Stir and enjoy!
