Baked Apples with Brown Sugar image

Great comfort food. Best to make fresh but you can prepare the apples well ahead of time and just refrigerate until ready to bake. They'll brown up a little bit from exposure to air but that won't matter once they're cooked, all bubbly, brown and delicious.

2 Golden Delicious apples
2 to 3 tablespoons butter
4 tablespoons light brown sugar
Ground cinnamon, for sprinkling
Creamy Custard Sauce, recipe follows
1/2 pint light vanilla ice cream, melted (recommended: Ben and Jerry's)
2 egg yolks

Steps:

  • Preheat oven to 350 degrees F.
  • Wash and dry apples. Cut the apples in half and remove the core but leave any stems intact. Place apples in baking dish. Divide butter among each core cavity. Top each apple half with a tablespoon of sugar and dash with cinnamon.
  • Bake apples until the flesh is tender and they're bubbly and perfect looking, about 30 minutes. Serve with Creamy Custard Sauce.
  • Heat the melted ice cream in a small saucepan over low heat until hot. Meanwhile, put the yolks in a mixing bowl and whisk until smooth. While whisking, slowly drizzle about 1 or 2 tablespoons hot melted ice cream into the yolks until blended. While whisking constantly, slowly add the rest of the hot liquid to the yolk mixture. Pour the mixture back into the saucepan and return to low heat.

6 baking apples (preferably organic, such as Honeycrisp), cored
1/4 cup plus 2 tablespoons sugar
6 tablespoons unsalted butter, preferably European-style
Grated zest of 1/2 orange, preferably organic
1/2 cup raspberry or gooseberry jam
2/3 cup chopped toasted hazelnuts
Toasted-Flour Cookies, optional

Steps:

  • Preheat oven to 350 degrees. Fit apples snugly in a medium oval baking dish (apples should not tip over).
  • In a small bowl, combine sugar, butter, and orange zest until well incorporated. Transfer to a piping bag; pipe butter mixture into each apple, dividing evenly. Add 2 tablespoons water to baking dish.
  • Bake, basting twice with pan juices, until apples are tender but not falling apart, 40 to 50 minutes.
  • Transfer baking dish to a wire rack. Add a heaping tablespoon of jam to each apple; sprinkle each with a scant tablespoon of hazelnuts. Serve warm with cookies, if desired.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Scoop out the core from top of the apple, leaving a well. Do not cut all the way through. Stuff each apple with 2 tablespoons brown sugar and 1 tablespoon butter. Place in a shallow baking dish and sprinkle with cinnamon.

1 cup raisins

1/4 cup butter, melted
8 medium unpeeled tart apples
1/2 cup water
CUSTARD SAUCE:
1/2 cup sugar
1 tablespoon all-purpose flour
1/8 teaspoon salt
1 cup milk
1 cup heavy whipping cream
4 egg yolks, lightly beaten
1/4 teaspoon vanilla extract

Steps:

  • In a blender, combine the walnuts, raisins and sugar; cover and process until blended. Stir in butter; set aside. Core apples and remove enough pulp to leave a 1-in. shell. Fill each apple with about 1/4 cup nut mixture. , Place in a greased shallow 3-qt. baking dish. Pour water around apples. Bake, uncovered, at 375° for 50-60 minutes or until tender. , Meanwhile, for custard sauce, combine the sugar, flour and salt in a saucepan. Gradually stir in milk and cream until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. Stir a small amount of hot milk mixture into egg yolks; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cool. Serve with warm apples. Refrigerate leftovers.

500g carton ready-made custard
6 Bramley apples , halved through the middle and core removed
zest and juice 1 orange
1 tsp cinnamon
1 tbsp golden caster sugar
6 tbsp crunchy granola with almonds
cream or ice cream , to serve (optional)

Steps:

  • Heat oven to 180C/160C fan/gas 4. Pour the custard into a large baking dish. Toss the apples in the orange zest and juice, cinnamon and sugar.
  • Arrange the apples, cut-side up, on top of the custard and drizzle with any extra juice from the bowl. Sprinkle over the granola and bake for 30 mins, until the apples are soft and piping hot - cover after 20 mins if the granola is getting dark. Serve with a drizzle of cream or a scoop of ice cream, if you like.

2 tablespoons butter or 2 tablespoons margarine
1 -2 apple, peeled,cored and cut into 24 crescent shaped pieces
4 eggs
1/3 cup sugar
1 pinch salt
2 cups milk (or for richer custard use half and half)
1 teaspoon vanilla
nutmeg

Steps:

  • Melt butter (or margarine) in a large skillet over medium-high heat. Add apple slices and saute for 1 minute.
  • Reduce heat to medium-low, cover and cook 1 minute longer.
  • Reduce heat to low, uncover and let apples cook until light brown (3-5 minutes). Set aside.
  • Preheat oven to 325-degrees F.
  • Butter 6 custard cups (or butter a 1 1/2 quart casserole dish).
  • In a bowl, whisk eggs until thick. Add sugar and salt and beat well.
  • Blend in milk (or half and half) and vanilla.
  • Pour custard into prepared custard cups.
  • Set custard cups into large shallow baking pan.
  • Add enough boiling water to pan so water comes up halfway up sides of cups.
  • Bake for 1 hour or until a knife inserted in center of custard comes clean. (If using the casserole dish bake for 1 1/2 hours).
  • Remove cups from water and let cool to room temperature.
  • Top each custard with 4 (reserved) overlapping apple slices.
  • Refrigerate until cold or overnight.
  • Sprinkle with nutmeg before serving.

Baked Apples With Halva and Custard image

This recipe is based on Recipe #59138 from the talented evelyn/athens. I have just tweaked it a bit and added some home-made custard for fun. The measurements I have used are approximate and feel free to add more chocolate chips or cinnamon depending on your tastes. I also prefer to use small apples as I think they make nicer portions and bake more quickly.

9 small baking apples
3/4 cup halvah (vanilla is best, gently crumbled up)
1 tablespoon currants
1 tablespoon chocolate chips
1 teaspoon orange zest
1/2 teaspoon cinnamon
1 glass white wine
1 cinnamon stick
9 tablespoons kirsch liqueur (optional)
3 tablespoons custard powder
2 tablespoons sugar
2 cups milk (you might need 1/4 cup more depending on your custard)

Steps:

  • Preheat oven to 180 celcius.
  • Add the crumbled halva to a small bowl and add the currants, chocolate chips, orange zest and cinnamon.
  • Peel and core the apples and rub them lightly with lemon juice to stop them browning as you prepare the recipe.
  • Using your fingers gently push the halva filling into the apples making sure you turn them over and fill them from both sides.
  • Place the stuffed apples in a small baking dish which fits them well and is not too large.
  • Pour the glass of wine into the baking dish and then pour one tablespoon of kirsch liqueur over each apple if you like.
  • Break the cinnamon stick into two pieces and add it to the liquid in the baking dish.
  • Bake apples for around 40 minutes or until they are soft. Be careful not to burn the halva stuffing. If it browns and puffs up, cover the dish with foil and continue baking until the apples are done.
  • Meanwhile prepare the custard. Dissolve the custard powder in 1 cup of milk and add the sugar.
  • Add the remaining milk and heat the mixture in a saucepan stirring with a whisk until it thickens. I add a little more milk to my custard at the end when it has thickened so that it reaches the consistency I like.
  • Take custard off heat and lightly press cling wrap over it to prevent a skin forming.
  • When apples are done, place one on a serving dish and gently pour a little custard over it. It can be served warm or room temperature.
