BAKED APPLES WITH BROWN SUGAR
Great comfort food. Best to make fresh but you can prepare the apples well ahead of time and just refrigerate until ready to bake. They'll brown up a little bit from exposure to air but that won't matter once they're cooked, all bubbly, brown and delicious.

- Preheat oven to 350 degrees F.
- Wash and dry apples. Cut the apples in half and remove the core but leave any stems intact. Place apples in baking dish. Divide butter among each core cavity. Top each apple half with a tablespoon of sugar and dash with cinnamon.
- Bake apples until the flesh is tender and they're bubbly and perfect looking, about 30 minutes. Serve with Creamy Custard Sauce.
- Heat the melted ice cream in a small saucepan over low heat until hot. Meanwhile, put the yolks in a mixing bowl and whisk until smooth. While whisking, slowly drizzle about 1 or 2 tablespoons hot melted ice cream into the yolks until blended. While whisking constantly, slowly add the rest of the hot liquid to the yolk mixture. Pour the mixture back into the saucepan and return to low heat.
BAKED APPLES (POMMES BONNE FEMME)
Pommes bonnes femmes is a classic French baked apple dish. Marie-Aude Rose, the Parisian chef behind the much-lauded all-day cafe La Mercerie in New York, learned this version from her grandmother. The tender baked apples are finished with raspberry jam and toasted hazelnuts.

- Preheat oven to 350 degrees. Fit apples snugly in a medium oval baking dish (apples should not tip over).
- In a small bowl, combine sugar, butter, and orange zest until well incorporated. Transfer to a piping bag; pipe butter mixture into each apple, dividing evenly. Add 2 tablespoons water to baking dish.
- Bake, basting twice with pan juices, until apples are tender but not falling apart, 40 to 50 minutes.
- Transfer baking dish to a wire rack. Add a heaping tablespoon of jam to each apple; sprinkle each with a scant tablespoon of hazelnuts. Serve warm with cookies, if desired.

- In a blender, combine the walnuts, raisins and sugar; cover and process until blended. Stir in butter; set aside. Core apples and remove enough pulp to leave a 1-in. shell. Fill each apple with about 1/4 cup nut mixture. , Place in a greased shallow 3-qt. baking dish. Pour water around apples. Bake, uncovered, at 375° for 50-60 minutes or until tender. , Meanwhile, for custard sauce, combine the sugar, flour and salt in a saucepan. Gradually stir in milk and cream until smooth. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. APPLE CRUMBLE WITH HALVA TOPPING
Plain sesame halva makes a delicious topping for fruit crumbles or crisps. There is no need for any additional sugar or butter since halva is already sweet and contains fat. - Heat oven to 180C/160C fan/gas 4. Pour the custard into a large baking dish. Toss the apples in the orange zest and juice, cinnamon and sugar.
- Arrange the apples, cut-side up, on top of the custard and drizzle with any extra juice from the bowl. BAKED APPLE CUSTARD

- Melt butter (or margarine) in a large skillet over medium-high heat. Add apple slices and saute for 1 minute.
- Reduce heat to medium-low, cover and cook 1 minute longer.
- Reduce heat to low, uncover and let apples cook until light brown (3-5 minutes). Set aside.
- Preheat oven to 325-degrees F.
- Butter 6 custard cups (or butter a 1 1/2 quart casserole dish).
- In a bowl, whisk eggs until thick. Add sugar and salt and beat well.
- Blend in milk (or half and half) and vanilla.
- Pour custard into prepared custard cups.
- Set custard cups into large shallow baking pan.
- Add enough boiling water to pan so water comes up halfway up sides of cups.
- Bake for 1 hour or until a knife inserted in center of custard comes clean. (If using the casserole dish bake for 1 1/2 hours).
- Remove cups from water and let cool to room temperature.
- Top each custard with 4 (reserved) overlapping apple slices.
- Refrigerate until cold or overnight.
- Sprinkle with nutmeg before serving.
BAKED APPLES WITH HALVA AND CUSTARD
This recipe is based on Recipe #59138 from the talented evelyn/athens. I have just tweaked it a bit and added some home-made custard for fun. The measurements I have used are approximate and feel free to add more chocolate chips or cinnamon depending on your tastes. I also prefer to use small apples as I think they make nicer portions and bake more quickly.

- Preheat oven to 180 celcius.
- Add the crumbled halva to a small bowl and add the currants, chocolate chips, orange zest and cinnamon.
- Peel and core the apples and rub them lightly with lemon juice to stop them browning as you prepare the recipe.
- Using your fingers gently push the halva filling into the apples making sure you turn them over and fill them from both sides.
- Place the stuffed apples in a small baking dish which fits them well and is not too large.
- Pour the glass of wine into the baking dish and then pour one tablespoon of kirsch liqueur over each apple if you like.
- Break the cinnamon stick into two pieces and add it to the liquid in the baking dish.
- Bake apples for around 40 minutes or until they are soft. Be careful not to burn the halva stuffing. If it browns and puffs up, cover the dish with foil and continue baking until the apples are done.
- Meanwhile prepare the custard. Dissolve the custard powder in 1 cup of milk and add the sugar.
- Add the remaining milk and heat the mixture in a saucepan stirring with a whisk until it thickens. I add a little more milk to my custard at the end when it has thickened so that it reaches the consistency I like.
- Take custard off heat and lightly press cling wrap over it to prevent a skin forming.
- When apples are done, place one on a serving dish and gently pour a little custard over it. It can be served warm or room temperature.
