FLAVORFUL MAHI MAHI SHEET PAN DINNER
Steps:
- Preheat the oven to 375 degrees F (190 degrees C). Spray a large sheet pan with cooking spray.
- Mix green beans, olive oil, and seasoned salt together in a large bowl. Coat thoroughly. Place on one quarter of the sheet pan.
- Bake in the preheated oven for 10 minutes.
- While beans are baking, pat mahi mahi dry with a paper towel. Combine butter, lemon juice, and garlic in a small mixing bowl.
- Toss green beans. Spray the empty side of the pan. Add tomatoes and onion; toss well. Place mahi mahi on top and brush with the lemon-garlic mixture. Season fish and tomatoes with salt and pepper.
- Continue baking until fish flakes easily with a fork, about 25 minutes.

I have used this method for fresh albacore, yellowtail, and dorado (mahi mahi). I am sure it would work for any firm white fish. Don't fear the mayonnaise! I was inspired by other delicious fish dishes that contained mayonnaise to create this quick simple preparation of fresh fish. My 2-year-old and my 4-year-old both ask for more!

- Stir mayonnaise, soy sauce, and garlic together in a bowl.
- Place mahi mahi in a baking dish. Spoon mayonnaise mixture over the fish, then turn to coat. Sprinkle saltines over top.

Steps:
- Preheat the oven to 375°F.
- Pat dry fish filets and set aside.
- In a non-stick skillet over medium high heat add oil. Then add fish filets and season top with a dash of salt, garlic powder and black pepper.
- Cook for about 4 minutes or until the bottom is browned.
- Flip fish to the other side and season top with salt, garlic powder and black pepper.
- Keep cooking until browned.
- Remove fish from skillet and set aside.
- In the same skillet, melt butter then add tomatoes, season with salt, garlic powder, black pepper and cumin.
- Cook tomatoes for about 3 minutes or until it starts to burst.
- Remove from heat and mix in chopped cilantro.
- Return the fish to the skillet and bake in the oven for 5 more minutes.
- Remove from the oven and squeeze half a lemon over then serve.

- In a large ovenproof skillet, saute onion and green pepper in 1-1/2 teaspoons oil until tender. Add garlic; saute 1 minute longer. , Stir in the salsa, wine, olives and Greek seasoning. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until slightly thickened. Transfer to a bowl; set aside., Sprinkle mahi mahi with salt and pepper. In the same skillet, lightly brown fillets in remaining oil for 2 minutes on each side. Spoon salsa mixture over fillets. , Bake, uncovered, at 425° for 6 minutes. Sprinkle with cheese; bake 2-3 minutes longer or until fish just turns opaque.
