- In a shallow dish, combine the flour, cheese, cornmeal, paprika, salt and pepper; set aside. In another shallow dish, beat egg white and milk. Dip fillets in milk mixture, then in flour mixture. , Place in a 13-in. x 9-in. baking dish coated with cooking spray. Bake, uncovered, at 350° for 35-40 minutes or until fish flakes easily with a fork.

- In a shallow bowl, combine the bread crumbs, Parmesan cheese, parsley and seasonings. Dip catfish in butter, then in crumb mixture. Arrange in a greased 13x9-in. baking dish. , Bake, uncovered, at 375° until fish just begins to flake easily with a fork, 20-25 minutes. If desired, serve with tartar sauce and lemon wedges.

BAKED CATFISH
Steps:
- Season fish with salt and pepper. Place fish in oval casserole dish. Melt 4 ounces butter in small sauce pan. Add wine and remaining ingredients, except the paprika. Simmer about 2 minutes. Remove from heat and spoon over fish. Now sprinkle paprika over fish. Bake fish in 375 degree oven for 10 to 12 minutes, or until the fish is done.
BAKED CATFISH PARMESAN #1
Steps:
- Combine bread crumbs, Parmesan cheese and seasonings. Dip fillets in milk and then roll in crumb mixture. Spray baking pan with nonstick coating. Arrange fish in pan. Drizzle oil over fish. Bake at 450 degrees about 8-10 minutes or just until fish flakes easily. Yields 4 servings, 231 calories each. CATFISH BAKED WITH CHEESE

- Preheat oven to 350°F.
- Wipe fish dry.
- Combine cheese, flour, salt, pepper and paprika in a shallow dish.
- Combine egg and milk in a shallow dish.
- Dip fish in egg mixture, then in flour mixture, turning to coat.
- Arrange in a single layer in a baking dish.
- Pour the butter over the fish.
- Top with the almonds, if using.
- Bake for about 20 minutes, until fish is cooked through.
