This is a simple yet wonderful dish that's full of flavor. The meat is very moist and falls off the bone. We love to serve this dish in our home with rice and fresh corn on the cob.

1 (2 to 3 pound) whole chicken, cut into pieces
2 teaspoons garlic powder
1 ½ cups prepared barbecue sauce

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken in a shallow baking dish and sprinkle with garlic powder. Cover and bake 1 hour at 350 degrees F (175 degrees C).
  • Remove baking dish from oven and drain any fat from dish. Pour the barbecue sauce evenly over the chicken and bake uncovered for 30 minutes at 350 degrees F (175 degrees C). Remove and serve.

3 -4 lbs chicken, cut up (or the parts you like)
1 tablespoon olive oil
1 onion, chopped
1 red pepper
1 yellow pepper
2 garlic cloves, pressed (or more) or 2 garlic cloves, minced (or more)
1/2 lb mushroom (optional)
2 cups ketchup
2 cups chicken broth
1 tablespoon Worcestershire sauce
pepper
salt (optional)

Steps:

  • Preheat oven to 350°F.
  • Place chicken in a 9 x 13 baking dish.
  • In a large skillet, heat olive oil.
  • Sauté onion, bell peppers, garlic, and mushrooms (if using) until golden brown.
  • In a medium size bowl, combine ketchup, chicken broth, Worcestershire sauce, and pepper.
  • Pour the ketchup mixture over the sautéed vegetables in the skillet.
  • Bring the mixture to a boil, and then pour over chicken.
  • Place dish in the oven and bake 1 1/2 hours (this time is based on a whole cut up chicken; you will have to adjust time if using boneless chicken breasts, or thighs. About 30 to 35 minutes. This is only a guess. I use a thermometer. Poultry is done at 170 -185°F).

This chicken recipe is so easy, I hesitated in posting it. But I couldn't find it posted here, and it's so good, I thought I'd share it. It's my favorite way to bake chicken because it's moist and tender every time and the flavor is delicious!

4 chicken breasts, with bone and skin
1/4 cup butter, melted
1 -2 teaspoon Season-All salt (I use McCormick's)

Steps:

  • Preheat oven to 400°F.
  • Spray a shallow baking dish with non-stick cooking spray.
  • Rinse chicken breast under cool running water.
  • Pat chicken dry with paper towels.
  • Place chicken in dish.
  • Brush the melted butter over the chicken, using all the butter.
  • Sprinkle with seasoned salt.
  • Bake for 50-60 minutes or until cooked through.
  • ~NOTE~Chicken takes only 50 minutes in my oven.
  • Don't over cook, as they might turn out tough.
