2 cups low-fat cottage cheese
1 (10 ounce) package frozen chopped spinach, thawed and drained
2 eggs, beaten
½ cup grated Parmesan cheese
1 pinch garlic powder, or to taste
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix cottage cheese, spinach, eggs, and Parmesan cheese together in a bowl; pour into an 8-inch square baking dish and smooth into an even layer.
  • Bake in preheated oven until the cheese is bubbling along the edges, 20 to 30 minutes. Season with garlic powder, salt, and pepper.

1 1/2 cups cottage cheese (made from 1 ltr. of milk)
1 medium onion, finely chopped
1 medium tomatoes, finely chopped
2 green chilies, washed,ends trimmed and finely chopped
1 teaspoon garam masala powder
salt
2 tablespoons cooking oil
1/2 teaspoon cumin seed
1 cup whole wheat flour
100 ml milk
100 ml water
1 egg
1/2 teaspoon baking powder
1 teaspoon sugar
salt
1 tablespoon oil
50 ml milk
1 egg
1 pinch ground nutmeg

Steps:

  • Mix all the ingredients listed under"For pancakes" together.
  • Keep aside for 15 minutes.
  • Now, heat oil in a wok.
  • Toss in cumin seeds and allow to crackle.
  • Once they stop crackling, add onions and saute until well browned.
  • Mix in the garam masala powder, salt, tomatoes and green chillies.
  • Saute nicely.
  • Fold in the crumbled cottage cheese (paneer).
  • Keep aside.
  • Now, heat a griddle on medium flame.
  • Smear a little oil on its surface.
  • Carefully, using a ladle, pour 4 tbsps.
  • of the prepared batter on the griddle.
  • Flatten it now to make a round of about 6 inches in diameter.
  • Cover with a lid.
  • When the pancake's cooked on one side, pour 1/2 teaspoons of oil on it and then flip it over to cook the other side.
  • Likewise, prepare 6 pancakes and keep aside.
  • Note: Make sure you make the pancakes slightly thicker and softer instead of thin and crispy.
  • Now, in a medium-sized bowl, crack an egg and beat it well using an electric beater.
  • Add the milk, nutmeg powder, a pinch of salt and some sugar and mix well.
  • Then, grease an oven-proof dish (the size of pancakes).
  • Dip one pancake at a time in the egg-milk mixture.
  • Place it in the greased dish.
  • Gently, spread 2 tbsps.
  • of the filling over the pancake, leaving a small gap along the edges.
  • Alternate each layer with pancake and filling.
  • Finish it with a pancake.
  • Pour the remaining egg-milk mixture over the pancakes.
  • Now, bake the dish in a pre-heated oven at 150C for 20 minutes or until it is firm.
  • Remove from the oven.
  • Serve hot with tomato sauce AND sauteed veggies.
  • Dig in and enjoy!

6 -8 slices whole wheat bread (depending on how big the slices are)
1 cup low fat cottage cheese, somewhat drained
1/2 cup low-fat cheddar cheese, shredded
2 tablespoons parmesan cheese, grated (canned also works well)
1/8 cup celery, finely chopped
1/8 cup green onion, finely sliced (or other type of mild onion)

Steps:

  • In a medium sized bowl mix all ingredients.
  • Divide mixture among 3 or 4 slices of bread, top cheese mixture with remaining slices of bread.
  • Spray with cooking spray or lightly grease skillet, preheat on medium heat.
  • Cook sandwiches in the skillet (you may want to cover it with a lid or a pizza pan works well), flip when browned and cook the other side until golden brown.
  • Remove from pan when browned and heated through.
  • Enjoy immediately!
  • Note: Unlike grilled cheese sandwiches, do not spread the bread with margarine or butter, the lightly greased pan will prevent it from sticking and toast the bread nicely.
  • Makes 3 to 4 sandwiches.

3 tablespoons butter, softened
8 slices day-old Italian bread (3/4 inch thick)
8 slices American or cheddar cheese
8 thin slices deli ham
1 tablespoon grated Parmesan cheese
3 eggs
3/4 cup 2% milk
1 teaspoon seasoned salt
1/2 teaspoon pepper
1/4 teaspoon ground mustard

Steps:

  • Spread butter on one side of each slice of bread. Place four slices butter side down in a greased 13-in. x 9-in. baking dish. Top with American cheese, ham and Parmesan. Top with remaining bread, butter side up. , In a large bowl, whisk the eggs, milk and seasonings. Pour over bread; turn each sandwich. Bake, uncovered, at 350° for 30-35 minutes or until golden brown.
