A blend of hamburger, rice, red pepper and garlic in salsa-topped corn tortillas. Top with sour cream and black olives.

1 pound ground beef
2 cups cooked white rice
2 tablespoons water
1 ½ tablespoons chopped red bell pepper
1 tablespoon chopped fresh garlic
12 (6 inch) corn tortillas, or more to taste
2 cups salsa
1 ½ cups shredded Cheddar cheese

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • Add cooked rice, water, bell pepper, and garlic to the beef in the skillet; stir and cook until heated through, 3 to 5 minutes. Spoon onto tortillas and roll to close. Place taquitos tightly against each other in an 8x12-inch baking pan. Pour salsa over and top with Cheddar cheese.
  • Bake in the preheated oven until bubbly, about 25 minutes.

1 onion (minced)
1 teaspoon minced garlic
2 cups salsa (divided)
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
10 whole wheat flour tortillas
1 cup shredded Mexican Blend cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • Cook beef and onion in a skillet over medium heat until cooked through; drain excess grease.
  • Add garlic and cook for an additional minute.
  • Stir in 1 cup salsa, chili powder, salt and pepper.
  • Cook mixture over low heat, stirring occasionally, for 10 minutes.
  • Divide beef mixture evenly between tortillas, spreading down the middle, and sprinkle cheese on top.
  • Roll up tortillas and place seam side down on a baking sheet lined with foil.
  • Spray with a light layer of nonstick cooking spray.
  • Cook for 10 minutes, or until tortillas are golden brown.
  • Serve with remaining salsa, if desired.

1-1/2 cups KRAFT Shredded Hot Habanero Cheese
1 cup frozen corn
1/2 cup sour cream
1/3 cup drained pickled jalapeño peppers, coarsely chopped
12 flour tortillas (6 inch)

Steps:

  • Heat oven to 400°F.
  • Brown meat in large skillet; drain. Return meat to skillet. Add all remaining ingredients except tortillas; mix well.
  • Cover baking sheet with parchment; spray with cooking spray. Spread meat mixture onto tortillas; roll up. Place, seam sides down, on prepared baking sheet; spray with additional cooking spray.
  • Bake 10 to 15 min. or until heated through and golden brown.

These easy and delicious Cheesy Baked Beef Taquitos make the perfect lunch or after-school snack for your hungry kiddos!

1 pound lean ground beef
1 packet taco seasoning ((2 TBSP homemade))
1/4 cup salsa
2-3 tablespoons water (as needed)
10 string cheese sticks
10 soft taco-sized tortillas
Olive oil spray
Chili powder (for garnish)
Sour cream (for serving)
Salsa (for serving)
Guacamole (for serving)

Steps:

  • Preheat the oven to 350 degrees F.
  • Cook ground beef in a large skillet over medium-high heat until browned, about 8 minutes. Break up the meat as it cooks. Mix in taco seasoning, salsa, and water. Stir and cook for another 2 minutes. Remove from heat.
  • Place a string cheese in the middle of a tortilla and add about 3 tablespoons of taco meat. Fold in the sides of the tortilla and roll up from one end to the other to make a log shape. Place on a baking sheet seam side down and repeat with the remaining ingredients.
  • Spray the taquitos with olive oil spray and sprinkle with chili powder.
  • Bake for 15 minutes on the top rack. (see note)
  • Remove from the oven and serve warm with guacamole, sour cream, and/or salsa for dipping.
