1 lb ground beef
1 (1 1/4 ounce) package taco seasoning
2/3 cup beef broth
2 tablespoons butter
1 medium onion, chopped
2 tablespoons garlic, chopped
1/2 cup green onion, chopped
1 (4 1/2 ounce) can green chilies, chopped
1 (10 3/4 ounce) can cream of onion soup
1 (10 ounce) can enchilada sauce
1 (16 ounce) can refried beans
5 (12 inch) flour tortillas
3 cups monterey jack pepper cheese, shredded

Steps:

  • Preheat oven to 350°.
  • Using a 12-inch cast-iron skillet, cook beef with taco seasoning and broth over medium heat; drain.
  • In the same skillet, melt butter. Cook onion, garlic and green onion in butter until tender. Add green chilies, soup and meat, stirring well. Transfer mixture to a medium bowl.
  • Wipe skillet clean with a paper towel. Lightly spray skillet with cooking spray; set aside.
  • In a separate bowl, combine enchilada sauce and beans, whisking well.
  • In prepared skillet, layer 1 tortilla, half of meat mixture, 1 tortilla and half of bean mixture. Repeat once more, ending with tortilla. Top with cheese.
  • Bake for 30 minutes, or until cheese is browned.
  • Garnish with sour cream, chopped green onions and chopped tomatoes, if desired.

1 lb ground beef
1/2 cup chopped onion
1 (1 1/2 ounce) envelope taco seasoning mix
1 (14 ounce) can green chilies
1 cup monterey jack cheese
1 1/4 cups milk
3/4 cup Bisquick
3 eggs
1/2 teaspoon red pepper sauce

Steps:

  • Heat oven to 400 degrees.
  • Lightly grease 10 inch pie plate.
  • Cook and stir ground beef and onion in 10 inch skillet until brown; drain.
  • Stir in seasoning mix.
  • Spread beef mixture in pie plate.
  • Sprinkle with chilies and cheese.
  • Beat remaining ingredients until smooth.
  • Pour in pie shell.
  • Bake 25 to 30 minutes.
  • Let stand 5 minutes before cutting.
  • Garnish with peppers and cheese.

Although this recipe is titled "mexican," it's more of an american creation. A good recipe when I'm looking for something easy and quick for dinner.

2 lbs ground pork or 2 lbs ground turkey
1/2 cup chopped onion
1/4 cup chopped green chili
2 teaspoons chili powder
8 ounces tomato sauce
1/2 teaspoon garlic powder
8 ounces cheddar cheese, shredded
1/2 cup sour cream
1 egg white, beaten stiff

Steps:

  • Heat oven to 375°F.
  • Cook ground beef. Drain.
  • Add to the cooked ground beef: onion, green chiles, chili powder, tomato sauce, and garlic powder. Simmer 8-10 minutes.
  • Grease an 8 x 8 baking pan. Put meat mixture in pan.
  • Beat together cheese, sour cream and egg white. Put on top of meat mixture.
  • Bake 25-30 minutes.

1 lb ground beef
1 1/4 ounces taco seasoning mix
2 cups canned corn niblets
2 lbs potatoes, peeled and diced
1 cup cheddar cheese, shredded

Steps:

  • Brown and drain ground beef.
  • Add taco seasoning to taste [we prefer a less spicy mix, so I only use half the envelope].
  • Add corn.
  • Meanwhile, boil potatoes until tender, then mash.
  • If you like, you can add butter and milk.
  • Spread about one third of the potatoes in a round 2 quart casserole dish.
  • Top with the ground beef mixture, then the cheese. Finish with the remaining potatoes.
  • To use right away, bake at 350 about 30 minutes.
  • To freeze, cover and freeze until solid. Lift out of casserole dish and wrap in foil. Place in zipper bag, label with name and date. Use within 3 months.
  • To reheat, unwrap and place in original dish, defrost completely. Bake at 375 for 40-45 minutes.
