REALLY EASY BAKED SOLE FISH WITH MOZZARELLA AND TOMATO
If you are tired of the same baked fish recipe, then I think you will really enjoyed this..it's easy to put together and really good! Although the recipe calls for using sole, and that is the only kind of fish I have used for this recipe in the past, I imagine that you probably could substitute about any kind of thicker fillets for the sole, I am thinking flounder would be a good choice also.

Steps:
- Set oven to 375 degrees.
- Butter (do not use cooking spray) a 13 x 9-inch baking dish.
- Rinse fish fillets with cold water and pat dry with a paper towel.
- Arrange fillets in a single layer in dish.
- Sprinkle with shredded mozza cheese.
- Top with tomato slices.
- Sprinkle seasonings over top.
- Bake for 15 minutes, or until fish is "flakey" and cooked (do not over bake fis).
- Serve immediately.

ROASTED COD WITH TOMATOES, BASIL, AND MOZZARELLA
Steps:
- Gather the ingredients. Preheat the oven to 425 F and arrange a rack in the top of the oven. Oil a roasting pan or baking dish.
- Place the cod fillets in the prepared dish. Drizzle the fish with 1 tablespoon of the olive oil and season with salt and pepper.
- Place the halved tomatoes, basil leaves, and mozzarella slices on top of the fillets. Sprinkle on the Parmesan cheese and drizzle over some olive oil.
- Place the dish on the top rack of the oven and bake for 15 to 20 minutes, until the fish is opaque, flakes easily, and the cheese has turned golden brown.

EASY CHEESE BAKED FISH
I quite often bake my fish this way. Easy & simple, nothing fancy, but we like the result. I actually do not even measure the ingredients anymore and just throw it together, but these are the original measurements. Sometimes I add a little lemon juice or lemon pepper seasoning and top it all off with a sprinkling of parsley for a little colour.

- Place fish in a greased pan with dabs of butter on top.
- Season with salt& pepper to taste.
- (this is where I sprinkle on lemon juice or lemon pepper if using) Cover with sliced onion.
- Pour on milk.
- Bake at 400 degrees for 12-15 minutes.
- Remove from oven and sprinkle with grated cheddar cheese and a little parsley if desired.
- Return to oven until cheese melts.
