Healthy fish dishes do not have to be bland or dry - try out this delicious baked cod with breaded parmesan crust!

Number Of Ingredients 8

2 cups sprouted or sour dough bread crumbs*
2 Tbs dried Oregano
2 Tbs garlic powder
1/3 cup Parmesan cheese, grated
1 egg
Salt and Pepper
Extra Virgin Olive Oil
4 cod fillets

Steps:

  • Preheat oven to 375 degrees
  • Combine bread crumbs, Parmesan, oregano, and garlic in a shallow bowl.
  • In a separate shallow dish, beat egg with 1 Tbs. of water.
  • Salt and pepper each fish fillet.
  • Coat fillet in egg mixture then in bread crumb mixture.
  • Place breaded fillets on a wire rack on top of a sheet pan. Drizzle each fillet with Extra Virgin Olive Oil. Bake for 15 - 17 minutes or until fish is flaky. Enjoy!

¾ cup freshly grated Parmesan cheese
1/2 cup Panko breadcrumbs* (optional, for extra crispy fish)
2 teaspoons paprika
1 tablespoon chopped fresh parsley (or 1 teaspoon dried parsley)
¼ teaspoon sea salt (optional, if you're sensitive to salt, omit until after you've tasted the cooked fish)
1 tablespoon extra virgin olive oil or avocado oil
4 (6 ounce) cod fillets
lemon wedges (optional: for serving) (cut into wedges)

Steps:

  • Preheat the oven to 400ºF (205°C). Line a baking sheet with parchment paper or foil. Alternatively, a glass dish can be used for baking the fish.
  • In a shallow bowl, mix together the Parmesan, Panko breadcrumbs (if using) paprika, parsley and salt (if using). Drizzle the cod with olive oil (rubbing it into the front and back of the fillet), then dredge the fish in the cheese mixture, pressing it in lightly with your fingers. Transfer to the baking sheet pan. Top cod with any leftover cheese mixture.
  • Bake until the fish is opaque in the thickest part, 10-15 minutes. Serve with the lemon slices.

2 tablespoons grated Parmesan cheese
1 tablespoon lemon juice
1/2 teaspoon salt
1/2 teaspoon anchovy paste
1/4 teaspoon ground black pepper
1/2 cup fresh bread crumbs
3 tablespoons chopped fresh parsley
4 cod fillets
lemon wedges

Steps:

  • Preheat the oven to 450 degrees F. Grease a rimmed baking sheet. Combine the mayonnaise, Parmesan, lemon juice, salt, anchovy paste, and black pepper in a bowl and mix well. Combine the breadcrumbs and parsley in a shallow dish. Spread some of the mayonnaise mixture on one side of the cod. Dredge the coated side in the breadcrumb mixture and then place the fish crumb side up on the baking sheet. Place the baking sheet in the oven and bake at 450 degrees for 15-20 minutes or until the fish is cooked through and the breadcrumbs are toasted. Serve the baked cod with lemon wedges.

1/3 c mayonnaise
3 Tbsp parmesan cheese ; grated
2 Tbsp sliced green onions or chives
1/2 tsp lea & perrins white wine worcestershire marinade

Steps:

  • 1. Rinse the fish fillets and pat dry with a paper towel.
  • 2. In a small mixing bowl combine all the ingredients ( except the fish ) and mix well until smooth.
  • 3. Slather the mixture all around the fillets and place in a grease a 9x9 baking dish ; spread any remaining mixture on top of fish.

3/4 cup freshly grated Parmesan cheese
1/2 lemon ((zest, plus juice))
2 tablespoons fresh parsley ((cut small or chopped))
1/2 teaspoon garlic powder
1 1/4 teaspoon paprika
3 tablespoons salted butter* ((See notes. Use up to 5 tablespoons if you want extra butter sauce))
1 1/2 pounds fresh cod

Steps:

  • Preheat the oven to 400 degrees F. Grease a rimmed baking sheet with cooking spray. Place the grated Parmesan on a dinner plate and add the garlic powder and paprika.
  • Wash the lemon and pat it dry. Cut it in half and make zest from one of the halves by using a zester or grater to shave off the yellow part of the skin, adding it to the cheese mixture.
  • Rinse the parsley and pat it dry. Cut it with scissors or chop it before adding it to the cheese mixture. Toss the cheese mixture with a fork to blend it.
  • Rinse the fish in cold water and rub your thumbs along the surface to see if there are any bones to remove. Pat the fish dry with paper towels.
  • Melt the butter in a small pan on the stove or microwave it in a bowl. Set up an assembly line from left to right with the fish, the butter, the cheese mixture, and the sheet pan.
  • Use a fork to dip each piece of fish in the butter on both sides, then in the cheese mixture, coating both sides and patting the topping onto the cod with the fork. Place the coated fish onto the sheet pan, top with any excess melted butter and bake for 15 minutes. The cod is done when it can be easily flaked with a fork.
  • Squeeze lemon juice over the fish and serve with bread for dipping in the garlic butter (you can place the pan on the table for informal dinners) or spoon the butter over rice, mashed potatoes or polenta. Store leftover cod in the refrigerator for up to three days.
