¾ cup bread crumbs
4 chicken breast halves

Steps:

  • Preheat oven to 400°F. Line a rimmed baking sheet with parchment.
  • In a medium bowl, combine mayonnaise and seasoning mix until well-blended. Place the breadcrumbs in a shallow bowl or plate.
  • Dip each breast in the mayonnaise mixture, turning on all sides until well-coated, shaking off any excess. Lay the chicken in the breadcrumbs and turn until evenly coated.
  • Arrange chicken on the prepared baking sheet and bake approximately 25 minutes, or until an internal temperature of 165°F or until juices run clear. (For chicken breasts weighing 6 to 8 ounces, increase cooking time to 40 to 45 minutes.)

  • Preheat oven to 350 degrees F (175 degrees C). Grease baking sheet with vegetable oil.
  • Put bread crumbs and ranch dressing into separate bowls.

4 6-ounce boneless skinless chicken breasts (about 1.5 lbs)
1 tsp salt
1 tsp pepper
3 tablespoons homemade ranch seasoning (or use 3 tablespoons of a store-bought seasoning packet.)
¾ cup sour cream
1 cup plain panko breadcrumbs
¾ cup shredded sharp cheddar cheese
¼ cup grated parmesan cheese
1 tbsp extra virgin olive oil

Steps:

  • Put the chicken in-between parchment paper or plastic wrap and using a meat mallet, or rolling pin, pound out the chicken breasts until each one is 1/4 inch in thickness. This allows the chicken to cook quickly and evenly. Sprinkle both sides with salt and pepper and then set aside.
  • In a medium bowl, mix together the sour cream and 2 tablespoons of the ranch seasoning.
  • Place the chicken breasts into the sour cream mixture and, using tongs or your hands, mix together until the chicken is completely coated.
  • Cover and let the chicken marinate for at least an hour. If you can prepare this step in the morning or the night before.
  • Preheat the oven to 425 degrees.
  • Mix 1 tablespoon ranch seasoning, panko breadcrumbs, parmesan cheese, and shredded cheddar cheese in a medium bowl.
  • Dip the marinated chicken breasts into the panko mixture and place on a sheet pan, or in a baking dish, coated with olive oil.
  • Divide the remaining panko mixture between the chicken breasts.
  • Bake for 25 - 30 minutes or until the chicken is cooked through. The internal temperature of the chicken should be 165 degrees when it's cooked completely.
  • Serve with a salad, rice, or vegetables.

  • Combine the chicken breasts with the ranch salad dressing in a zip-top bag or plastic container. Make sure the chicken is fully coated with the dressing. 1½ cups Ranch dressing
½ cup sour cream
1-1½ cup grated Parmesan cheese (divided)
Kosher salt
Freshly grated black pepper
1/4 cup cooked bacon crumbles
Garnish: diced fresh parsley

Steps:

  • Heat oven to 375°F and spray an 8 x 11-inch baking dish with cooking spray.
  • If the breasts are uneven in thickness, pound them to an even 1" thickness using a meat pounder.
  • Sprinkle both sides of meat with half the grated Parmesan cheese, salt and freshly ground black pepper. Place the chicken in the prepared baking dish.
  • In a medium bowl, whisk together Ranch dressing and sour cream. Pour the mixture over the chicken breasts and sprinkle with remaining Parmesan cheese.
  • Bake at 375°F for 20-30 minutes or until a meat thermometer inserted in the thickest part of the breast reads 150°F.
  • Set oven to broil and broil the breast an additional 2-4 minutes or until the chicken turns golden. It will burn quickly so watch closely.
  • The chicken is cooked through when the thermometer reads 160°F when inserted in the thickest part of the middle breast.
  • Remove from the oven and sprinkle with cooked bacon crumbles. Allow the chicken to rest a few minutes before serving.
  • Garnish with diced parsley, if desired.

1 1/2 cups ranch dressing
1 cup Parmesan cheese
1 cup Cheddar cheese
1 packet ranch dressing mix

Steps:

  • Preheat oven to 350 degrees.
  • Cover cookie sheet with aluminum foil.
  • Poor ranch dressing into a medium sized bowl, and set aside.
  • In a separate bowl, combine Parmesan cheese, Cheddar cheese, and the packet of ranch dressing mix.
  • Mix until well combined.
  • Dip thawed chicken breasts into the bowl of ranch and place on the covered cookie sheet.
  • Sprinkle the top of the chicken breast with the cheese and ranch seasoning mixture, until you can't see the chicken breast.
  • Place the ranch and cheese covered chicken breasts into the oven and bake for 30 minutes or until the chicken is cooked all the way through.
  • Sprinkle with extra Cheddar and Parmesan cheese when it is freshly out of the oven (our family really likes cheese)

1 cup mayonnaise
¼ cup sour cream
2 cloves garlic (finely minced)
2 tablespoons olive oil
1 ounce ranch seasoning
6 slices bacon (cooked crisp and chopped)
1 cup cheddar cheese (freshly shredded)
1 cup mozzarella cheese (freshly shredded)
½ white onion (diced)
4-5 chicken breasts (with the fat pieces cut off)

Steps:

  • Preheat the oven to 400 degrees Fahrenheit and spray a 9x13 inch baking pan or casserole dish with nonstick spray and set aside.
  • Add the mayonnaise, sour cream, garlic, olive oil, and ranch seasoning to a medium bowl and stir to combine.
  • Stir in ¾ of the bacon, ¾ of the cheddar cheese, ¾ of the mozzarella cheese and all the onion then set aside.
  • Place one of the chicken breasts onto a plate and cut deep holes into it using a knife then spread the ranch mixture onto the chicken and push some of it into the holes.
  • Place the chicken breast into the baking pan and repeat the process with the remaining chicken breasts and ranch mix.
  • Sprinkle on the remaining cheddar cheese, mozzarella cheese and bacon then loosely cover the pan with part aluminum foil.
  • Bake for 20 minutes then remove the aluminum foil and bake for another 10 minutes or until the cheese starts to bubble around the edges and turn a light golden color.
  • Let the chicken rest for 10 minutes before serving with freshly chopped chives and additional bacon for garnish if desired.
