RAW APPLE MUFFINS

I made these years ago everyday in a small cafe I worked at. They are chunky with the batter just holding all the fruit and nuts together.

Number Of Ingredients 12

1/2 cup oil
2 teaspoons vanilla
1 cup walnuts
1 cup raisins
4 cups apples, diced
1 cup sugar
2 cups flour
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
2 eggs

Steps:

  • Using 3 Bowls:.
  • Combine apples and sugar.
  • Combine dry ingredients except raisins and walnuts.
  • Combine liquid.
  • Mix liquids and apples. Combine with dry ingredients to moisten. Add walnuts and raisins. Bake 25 minutes at 350.
  • i've just made them recently and if all the quantities are included and not overbaked, the apples alone make this moist and almost sticky. So i hope some will give this recipe a try.

1/3 cup margarine, softened
1 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon nutmeg
1 egg
1/2 cup milk
1/2 teaspoon salt
1 1/2 cups flour
cinnamon sugar

Steps:

  • Preheat oven to 350 degrees.
  • In a mixing bowl, cream the margarine and sugar.
  • Beat in the egg.
  • Add the dry ingredients and then the milk.
  • In a greased 12-muffin pan, fill each cup 2/3 full with batter.
  • Bake 20-25 minutes until done.
  • When done, but not completely cooled, roll each muffin top in the cinnamon sugar.

These are unlike any doughnut you've ever eaten. Actually, they're muffins. The center of the apple-cinnamon delight sinks,giving it a doughnut look. I got the recipe from Midwest Living Magazine.

1 1/2 cups all-purpose flour
1 1/2 teaspoons kosher salt
1 teaspoon baking soda
1 cup shortening
1 1/2 cups sugar
2 eggs, lightly beaten
1/2 cup buttermilk
1 1/2 cups finely chopped unpeeled apples
1/2 cup sugar
1 teaspoon cinnamon

Steps:

  • Set oven on 350 deg F.
  • Grease twenty-four 2-1/2 inch muffin cups well,set aside. In a medium bowl,stir together flour,salt and baking soda,set aside.
  • In a large bowl, beat shortening with a electric mixer 30 seconds.
  • Gradually add the 1-1/2 cups sugar,about 1/4 cup at a time,beating on medium speed until well-combined and scraping sides of bowl. Beat 2 minutes more.
  • Add eggs, 1 at a time,beating after each addition.
  • Alternately add flour mixture and buttermilk to shortening mixture,beating on low speed after each addition just until combined.
  • Fold in apples.
  • Spoon batter into prepared muffin cups,filling two-thirds full.
  • Bake in the pre-heated oven for 18 to 20 minutes or until dark golden brown and wooden toothpick inserted in centers comes out clean.
  • Doughnuts will dip in middle. Cool in pan on wire rack 15 minutes.
  • In a small bowl, combine the 1/2 cup sugar and cinnamon.
  • Carefully remove doughnuts from muffin cups(donuts will be tender). While still warm, roll doughnuts in the sugar mixture. Serve warm.

These are really yummy muffins. My friend Jenny brought these to a potluck once and I asked her for the recipe. I am giving the original measurements for the topping as she gave me, however I prefer to make less toppping.

1 1/2 cups sifted all-purpose flour
1 3/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 cup granulated sugar
1/3 cup shortening
1 large egg, beaten lightly
1/4 cup milk
1/2 cup granny smith apple, grated
1/2 cup unsalted butter, melted (or less)
1 teaspoon cinnamon (or less)
1/2 cup granulated sugar (or less)

Steps:

  • Prehat oven to 350 F and have ready greased muffin tins.
  • Sift together flour, baking powder, baking soda, salt, sugar, and nutmeg.
  • Cut in shortening until mixture is like fine crumbs.
  • Mix together milk, eggs, and grated raw apple.
  • Add all at once to the flour mixture and then stir together quickly and thoroughly.
  • Fill greased tins 2/3s full and bake 20-35 minutes, or until a toothpick tests done.
  • Remove from pan and dip tops first in melted butter then in cinnamon sugar mixture.
