Simple and easy. I got this off the Rachel Ray show. Nice appetizer to go with just about anything you have for dinner.

- Pile everything in the middle of a foil packet and seal.
- Bake in a 350 oven until heated thru.
- Open foil up and enjoy.

BAKED CHEESE OLIVES
Rich cheese dough surrounds a savory olive. A great pick-up appetizer or snack. You can freeze the unbaked, dough-wrapped-olives and then bake them right out of the freezer, extending the baking time by a few minutes.

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- In a small mixing bowl, combine cheese and butter or margarine. Stir flour and cayenne pepper into the cheese and butter mixture. Blend well. Wrap a tablespoon of dough around each green olive. Arrange the wrapped olives on a cookie sheet.
- Bake for 15 minutes, or until golden brown.

- Using an electric mixer with the paddle attachment, beat the butter until creamy. Beat in the cheese until well blended. Blend in the flour mixture just until combined. Mix in additional flour as needed, to form a soft dough. Refrigerate for 30 minutes.
- Pinch off a piece of dough around the size of a walnut half; flatten into a thin, oval shape and wrap around an olive, enclosing it completely. Place on a cookie sheet. Repeat with the remaining dough and olives. Refrigerate olives for at least 1 hour, up to overnight.

- PREPARE OLIVE-CHEESE MIXTURE: Place all ingredients in a bowl (except muffins) and mix with a spoon until well combined.
- ASSEMBLE: Divide mixture onto the 16 muffin halves and spread evenly to cover. Cut each muffin half into 4 quarters to make 64 pieces in all. To freeze (Note 1)
- BAKE: Lay appetizer pieces on a baking sheet lined with foil or parchment. Bake for 10-11 minutes or until bubbly and lightly browned. Best served hot, but also good at room temperature.
