Used to be that no one dreamed of putting chocolate and bacon together. These days, it's the norm! So we set the bar higher with this: BAKER'S Bacon Fudge.

Steps:
- Line 9-inch square pan with foil, with ends of foil extending over sides. Bring sugar, butter and evaporated milk to full rolling boil in large saucepan on medium heat, stirring constantly. A rolling boil does not stop bubbling when stirring. Cook and stir 4 min. Remove from heat.
- Add chocolate and marshmallow creme; stir until melted. Stir in bacon and vanilla.
- Pour into prepared pan; spread to cover bottom of pan. Cool completely. Use foil handles to lift fudge from pan before cutting into 40 pieces.

FUDGY BACON SUPREME
Creamy chocolate fudge, topped off with a sweet chocolate ganache and garnished with (YOU GUESSED IT!) crunchy salty bacon! This combination of sweet and savory is PERFECT for unexpected appetizers, or just a dessert worth trying. I used this recipe for a contest, and won 50 bucks!

Steps:
- For fudge, melt chocolate chips in a saucepan over very low heat . When the chips are nearly all melted, stir in the condensed milk until the mixture is very smooth and creamy, and add the vanilla extract and a pinch of salt. Pour the fudge into a square 9x9-inch pan, and refrigerate until firm, at least 2 hours.
- For ganache topping, place heavy cream and chopped milk chocolate into the top of a double boiler over simmering water, and stir until the chocolate has melted and the mixture is smooth. Remove from heat, and pour the ganache over the chilled fudge in an even layer. Return to refrigerator for at least 2 more hours to chill.
- Slice bacon into 1/2-inch squares, and place into a large, deep skillet. Cook over medium heat, stirring occasionally, until evenly browned and very crisp, about 10 minutes. Drain the bacon on a paper towel-lined plate. Sprinkle bacon bits with a pinch of salt.
- Spread the bacon bits over the ganache layer, pressing the bacon lightly into the fudge. Return to refrigerator, chill until bacon is cooled, at least 30 minutes; cut into squares.

- Line 8-inch square pan with foil. Microwave chocolate and milk in microwaveable bowl on HIGH 2 to 3 min. or until chocolate is almost melted, stirring after 2 min.; stir until completely melted. Stir in nuts and vanilla.

BAKER'S FABULOUSLY FLAWLESS FUDGE
This is from a REALLY old edition of Reader's Digest. I request this for my birthday instead of a cake. I think it is divine. Very rich though, beware! I usually omit the nuts and it still turns out just fine. (Cook time is chill time)

- Spread nuts on cookie sheet and bake at 350°F (180°C) for 10 minutes to toast; cool.
- Melt chocolate with milk in large microwaveable bowl in microwave on HIGH 2 to 3 minutes or until chocolate is almost melted. Stir until chocolate is completely melted.
- Stir in vanilla and nuts. Spread in foil-lined 8 inch (20 cm) square pan.
- Chill 2 hours or until firm. Cut into squares.
- VARIATIONS: PEANUT BUTTER FUDGE - Omit nuts. Drop 1/2 cup (125 mL) peanut butter by teaspoonfuls on top of fudge. Swirl with knife to marble.
- WHITE CHOCOLATE LAYERED FUDGE - Prepare fudge as directed using 3/4 cup (175 mL) nuts, 1 pkg (225 g) Baker's Semi-Sweet Chocolate, 3/4 cup (175 mL) sweetened condensed milk and 1 tsp (5 mL) vanilla. Spread in prepared pan. Melt 1 pkg (170 g) Baker's White Chocolate. Stir in remaining 1/2 cup (125 mL) sweetened condensed milk. Spread over dark chocolate layer. Chill as directed.

- Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned and crisp, about 10 minutes. Drain on paper towels; set aside.
- Stir milk and unsweetened chocolate in a large saucepan over low heat until chocolate melts and mixture is thoroughly combined, 2 to 3 minutes; stir in sugar all at once. Whisk mixture, trying to clean the sides of pan as much as possible.
- Bring the mixture to a boil and cook, stirring constantly, until a candy thermometer inserted into the middle of the fudge reads 236 to 238 degrees F (110 to 115 degrees C), or candy forms a soft ball when dripped into cold water. Remove from heat as soon as candy hits the correct temperature; stir in bacon.
- Place butter squares onto fudge mixture and pour vanilla extract over the top. Set aside with thermometer in the fudge; do not disturb pot until temperature has dropped to 110 to 115 degrees F (43 to 46 degrees C).
- While fudge is cooling, line an 8x8-inch baking dish with aluminum foil and coat with butter. When fudge has reached 110 to 115 degrees F, stir in butter and vanilla extract thoroughly into the fudge; pour fudge into prepared pan.
- Refrigerate fudge for 30 minutes, then score the fudge in desired piece sizes; return to refrigerator for 2 more hours. Cut into pieces to serve.
