My daughter's boyfriend's mom gave her a cookbook that was created by the Houston Ballet for their Nutcracker Christmas Market in 1984. The recipes in the book were submitted by directors, choreographers, and dancers in the Houston Ballet that year. This recipe was submitted by Jeanne Doornbos, Soloist.

1 cup rice
8 slices bacon
3 jalapenos
2 cups sour cream
8 ounces monterey jack cheese
3 tablespoons butter
1/2 cup grated cheddar cheese
paprika
salt and pepper

Steps:

  • Cook the rice according to package directions. Cook and crumble the bacon. Mince the jalapenos. Slice the Monterey Jack cheese into thin slices.
  • Layer 1/2 of the rice in the bottom of a greased 8x8 casserole dish. Dot with butter and add salt and pepper to taste.
  • Cover with 1 cup of sour cream, 1/2 of the jalapenos, 1/2 of the bacon, and 1/2 of the Monterey Jack cheese.
  • Repeat the layers.
  • Top with grated cheddar cheese and a sprinkling of paprika.
  • Bake at 350 degrees for 30 minutes.

This recipe is a family favorite that I have been making for years. It is tried and true. We especially love it served along side baked chicken dishes.

1 cup long grain white rice
4 tablespoons butter
1/2 cup finely diced onion
4 ounces mushrooms, sliced
1 (13 3/4 ounce) can chicken broth
1/4 cup water
1/2 teaspoon salt
1 cup medium egg noodles

Steps:

  • Preheat oven to 350 degrees.
  • In 10" skillet over medium heat, brown rice, stirring until golden in color.
  • Put rice in a 1-1/2 quart casserole.
  • In skillet over medium heat melt butter; add onion and mushrooms and cook until onion is tender, stirring occasionally.
  • Stir in chicken broth, water and salt; heat to boiling.
  • Stir hot broth mixture and uncooked noodles into rice in casserole.
  • Cover and bake 30 minutes or until rice and noodles are tender and liquid is absorbed. Stir to combine and serve.

CRISPY RICE BASEBALL TREATS



Crispy Rice Baseball Treats image

Number Of Ingredients 7

2 tablespoons unsalted butter, plus more for the pan
One 12-ounce bag marshmallows
6 cups chocolate-flavored crispy rice cereal
Vegetable oil, for your hands and the cookie cutter
1 cup white candy melts
About 2 teaspoons shortening or paramount crystals
1 tube red decorating icing

Steps:

  • Butter a 9-by-13-inch baking pan, line the bottom with parchment paper and butter the parchment.
  • Put the marshmallows and butter in a large pot and warm over medium heat, stirring, until completely melted. Add the rice cereal and stir until completely coated. Pour the mixture into the prepared baking pan. Lightly oil your hands or a little square of plastic wrap and press and smooth the cereal evenly into the dish. Cool until set, but not totally dry, about 30 minutes.
  • Lightly oil a sheet of parchment paper and turn the block of crispy treats out onto it. Oil a baseball glove-shaped cookie cutter (about 4 inches wide) and cut out 6 baseball gloves, oiling the cookie cutter between each. Gather some of the scraps and make 6 baseballs, about 1 1/2 inches in diameter.
  • Put the candy melts in a small bowl and melt them in the microwave in 30-second intervals at 30-percent power until thoroughly melted and smooth. Add the shortening (or paramount crystals) a little bit at a time until slightly thinned to a nice coating consistency.
  • Coat the balls in the candy melts and let stand until completely set, about 20 minutes.
  • Fit a #2 or 3 pastry tip into a small pastry bag and fill the bag with the red decorating icing. Pipe a red line in an elongated semicircle shape similar to the lines of a baseball onto each ball. Then pipe small, crosswise lines along the semicircle to represent the stitching on a baseball.
  • Dab a little of the candy melt on the bottom of the balls, then press them lightly into the center of the gloves. Let stand until dry and set.
