Always cook up a package of potatoes and onions with the rest of your grilled meal! Start early, because it takes about a half an hour to cook. These cook over indirect heat (off to the side), so you can grill other things at the same time.

Ingredients

4 medium (2-1/4" to 3" dia, raw)s potatoes, sliced
1 red onion, sliced
1 teaspoon salt
1 teaspoon ground black pepper
4 tablespoons butter

Steps:

Preheat grill for medium heat.
For each packet, measure out 2 or 3 squares of aluminum foil large enough to easily wrap the vegetables, and layer one on top of the other. Place some of the potatoes and onion in the center, sprinkle with salt and pepper, and dot with butter. Wrap into a flattened square, and seal the edges. Repeat with remaining potatoes and onion.
Place aluminum wrapped package over indirect heat, and cover. Cook for approximately 30 minutes, turning once. Serve hot off the grill.

3 lbs red potatoes, cut into 1 1/2 inch cubes
1 large sweet onion, coarsely chopped
3 tablespoons olive oil
2 tablespoons butter, melted or 2 tablespoons bacon drippings
3 garlic cloves, minced
3/4 teaspoon salt
3/4 teaspoon pepper
1/3 cup chopped mixed fresh herbs, such as basil, chives, parsley, oregano, rosemary, sage, tarragon, and thyme

Steps:

Combine potatoes, onions and herbs in a large bowl.
Combine oil, butter, garlic, salt and pepper in a small bowl.
Drizzle over potato mixture.
Toss to coat well.
Arrange potato mixture on 1/2 of a piece of foil large enough to accommodate all the ingredients when made into a packet for grilling.
Grill over medium hot coals for 30 to 45 minutes or until potatoes are tender, turning and shaking occasionally.

8 slices bacon, cut in half
2 potatoes, cubed
2 tablespoons butter
2 teaspoons seasoned salt

Steps:

Preheat grill for medium heat and lightly oil the grate.
Place 4 large sheets aluminum foil on a flat work surface. Place 4 pieces bacon in the middle of each sheet of aluminum foil; pile 1/4 of the potatoes on top. Drizzle 1 1/2 teaspoon butter and 1/2 teaspoon seasoned salt over potatoes. Wrap aluminum foil around potatoes to create a pouch.
Place aluminum foil pouches on the preheated grill; cook until potatoes are tender and bacon is crispy, 10 to 15 minutes. Open pouches carefully.

Ingredients

4 medium sweet onions (such as Vidalia)
1 tablespoon butter or 1 tablespoon margarine, melted
1 teaspoon dijon-style mustard
1/8 teaspoon bottled hot pepper sauce
1 tablespoon brown sugar
pepper

Steps:

Peel onions.
Cut almost through each onion forming 8 wedges.
Place each onion in a 24x18 inch piece of foil.
Stir together the melted butter, mustard and hot sauce.
Drizzle over onions.
Sprinkle with brown sugar.
Seal each onion in the foil packet using a double fold leaving head space for steam to build.
Grill on a covered grill for about 25 minutes or until onions are nearly tender.
Make a 2 inch opening in the top of each packet.
Cover and grill for 10 minutes more or until onions are slightly browned.
Remove onion blossoms from foil packets and sprinkle with pepper.
