I love simple recipes that are fancy enough for guests. To get a velvety texture in this tart, I use creme fraiche, but sour cream works, too. -Veronica Callaghan, Glastonbury, Connecticut

1 sheet refrigerated pie crust
3/4 pound lean ground beef (90% lean)
1 shallot, finely chopped
2 large eggs
3/4 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
3/4 cup shredded part-skim mozzarella cheese
2/3 cup shredded Asiago cheese
1/3 cup oil-packed sun-dried tomatoes, coarsely chopped
1/4 cup coarsely chopped fresh basil
1 teaspoon minced fresh rosemary or 1/4 teaspoon dried rosemary, crushed
TOPPINGS:
2 tablespoons pine nuts, toasted
Thinly sliced fresh basil, optional

Steps:

  • Preheat oven to 400°. On a work surface, unroll crust; roll to a 12-in. circle. Press crust onto bottom and up sides of an ungreased 11-in. tart pan with removable bottom. Refrigerate while preparing filling., In a large skillet, cook beef and shallot over medium heat 5-7 minutes or until beef is no longer pink, breaking up beef into crumbles. Remove from heat., In a small bowl, whisk eggs, sour cream, salt and pepper until blended. Stir in cheeses, sun-dried tomatoes, chopped basil and rosemary. Stir into beef mixture; pour into tart shell., Bake on a lower oven rack 15-20 minutes or until crust is golden brown and filling is set. Just before serving, add pine nuts and, if desired, basil.

1 bag (5 oz) mixed spring greens
1/2 cup shaved Asiago cheese
1 medium ripe pear, thinly sliced
1/2 cup cashew halves and pieces

Steps:

  • In small jar with tight-fitting lid, shake dressing ingredients.
  • In medium bowl, toss greens with dressing; arrange on serving platter. Top with remaining salad ingredients. Serve immediately.

My friend Christine brought these to a Party at my house and she graciously shared the recipe with me. I served them the next week at a dinner party and had rave reviews. They freeze very well.

1 1/2 lbs mushrooms
1 tablespoon butter
1/2 cup onion, minced
2 garlic cloves, minced
2 teaspoons fresh thyme, chopped
1 pinch salt and pepper
1 1/2 cups whipping cream
2 large eggs
1 cup asiago cheese, grated
48 miniature tart shells

Steps:

  • Chop mushrooms in a food processor until finely minced.
  • In a large saute pan over medium heat melt butter add mushrooms and onions.Cook stirring often until mushrooms are soft and all the liquid has evaporated.
  • Stir in garlic and thyme and cook 1 minute longer.
  • Remove from heat and season to taste. allow to cool.
  • Preheat oven to 375.
  • Whisk eggs and cream together and add to cooled mushroom mixture.
  • Spoon mushroom filling into tart shells and top with Asiago cheese.
  • Bake for 12 to 15 minutes, until pastry is browned and filling puffs up a little.

  • Lay the puff pastry flat on the remaining baking sheet and cut each piece in half. Spread about 1/2 cup of pesto on to the 4 pieces of pastry.
  • Slice the chicken tenders in half and then toss with the remaining 2 tablespoons pesto. Evenly place the chicken and torn prosciutto over the puff pastry. If desired, sprinkle a little gorgonzola cheese overtop the pastries. Place in the oven with the peaches and bake for 25-30 minutes or until the pastry is puffed and the chicken cooked through. Remove both the peaches and tarts from the oven.
