1 large English cucumber, halved and sliced
2 cups grape tomatoes, halved
1 medium red onion, halved and thinly sliced
1/2 cup balsamic vinaigrette
3/4 cup crumbled reduced-fat feta cheese

Steps:

  • In a large bowl, combine cucumber, tomatoes and onion. Add vinaigrette; toss to coat. Refrigerate, covered, until serving. Just before serving, stir in cheese. Serve with a slotted spoon.

This quick and easy Balsamic Tomato Salad is Summer in a bowl! It features ultra-ripe tomatoes paired with cucumber, onion, and basil and a super simple dressing that can't be beat!

5 Roma tomatoes (or a mix of tomato varieties like cherry, heirloom, etc..)
1/4 red onion
1/2 a large English cucumber
fresh chopped basil (- as much as you'd like!)
balsamic vinegar (for drizzling (approx 1-2 TBSP))
1 lemon (, squeezed for juice)
1 clove garlic ((peeled and minced))
1/4 cup extra virgin olive oil
1 TBSP white wine vinegar
1/4 tsp salt (or extra to taste)
1/8 tsp pepper (or extra to taste)

Steps:

  • First chop those veggies! Cut Roma/plum tomatoes in half lengthwise then horizontally into slices. If adding cherry/grape tomatoes to the mix, slice in half lengthwise. Chop or slice onions Chop basil into ribbons.
  • Next let's make the dressing! Squeeze juice from lemon and mince garlic. Combine with remaining ingredient and season to taste.
  • Combine tomato, onion, and basil with dressing and mix well to coat.
  • Drizzle with balsamic vinegar and allow mixture to sit for 10-20 minutes. The longer this salad sits, the more pronounced the flavors will be. Serve with your favorite main dish and enjoy!

2 tablespoons red wine vinegar
1 teaspoon sugar
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon basil

3 medium tomatoes, chopped
1 cucumber, seeded and cubed
1 small green pepper, chopped
1/4 cup thinly sliced onion
