  • Preheat a grill to high on one side and lightly oil the grate. Season a 2-inch-thick porterhouse steak (3 pounds) with coarse sea salt and pepper. Grill over direct heat for 4 minutes, then rotate the meat 90 and cook 2 more minutes. Repeat on the other side. Move the steak to the cooler part of the grill (position the smaller end away from the heat); cover and cook until the meat reaches 128 to 130 for medium-rare, 12 to 15 minutes. Let rest 5 minutes before slicing. To make the sauce, simmer 3/4 cup balsamic vinegar, 2/3 cup ketchup, 1/4 cup honey, 2 sliced shallots, 2 tablespoons Worcestershire sauce, 1 tablespoon dijon mustard, 1/4 teaspoon allspice, and salt, pepper and sugar to taste until thickened, about 15 minutes. Strain, then whisk in some butter.

1/4 cup balsamic vinegar
1/4 cup water
2 tablespoons fresh lemon juice
1 tablespoon packed dark brown sugar
1 teaspoon packed dark brown sugar
4 (6 ounce) salmon fillets, with skin
salt & freshly ground black pepper
2 teaspoons canola oil (or vegetable oil)

Steps:

  • Stir together vinegar, water, lemon juice and brown sugar in a small bowl.
  • Pat salmon dry and season with salt and pepper.
  • Heat oil in a 12" nonstick skillet over moderately high heat but not smoking.
  • Increase heat to high, add salmon skin side up, and sear until well browned (about 4 minutes).
  • Turn fish over and sear until just cooked through (3 to 4 minutes more).
  • Transfer salmon to plates and carefully add vinegar mixture to skillet (liquid will bubble vigorously and steam.).
  • Simmer, stirring until thickened and reduced to about 1/3 cup (about 2 minutes).
  • Spoon glaze over salmon.

1 medium red onion, peeled and thinly sliced
2 cloves garlic, peeled and thinly sliced
8 shiitake mushroom stems
1 medium ripe tomato, coarsely chopped
1 bay leaf
1 teaspoon black peppercorns
1/3 cup balsamic vinegar
1/3 cup water
Salt and freshly ground black pepper to taste

Steps:

  • Cut 6 tablespoons of the butter into 1/2-inch cubes. Refrigerate. Melt the remaining butter in a large saucepan over medium heat. Add onion, garlic, mushroom stems, tomato and bay leaf. Cook, stirring occasionally, until the vegetables are soft but not brown, about 6 minutes.
  • Add vinegar and water. Reduce over medium high heat until just a syrupy liquid remains, about 8 minutes. Lower the heat slightly. Whisk in the cold butter, 2 to 3 pieces at a time, allowing each addition to be absorbed before adding the next. Strain through a fine sieve. Season with salt and pepper. Keep warm over a double boiler.

Reserved goose roasting pan with juices
1 cup (about) low-salt chicken broth
1 cup balsamic vinegar
2 tablespoons (packed) dark brown sugar

  • Strain juices from reserved roasting pan into large measuring cup; discard solids in strainer. Spoon fat off surface of pan juices in measuring cup. Add enough chicken broth to degreased juices to measure 1 cup. Place reserved roasting pan over 2 burners set at medium heat. Add vinegar to pan and bring to boil, scraping up browned bits; pour vinegar into saucepan. Add pan-juice mixture and sugar to saucepan. Bring pan sauce to boil, whisking until sugar dissolves.
