BANANA PUDDING RECIPE
Steps:
- First, I combine my 2 boxes of instant vanilla pudding and 4 cups of milk in a large bowl. Which means you will use 2 cups of milk per box of pudding
- You can use a whisk or a hand mixer, whichever you prefer they're both fairly easy. You will want to whisk/mix until all the lumps are gone.
- Next, you add in 1 cup of whipped cream into your pudding mixture.
- You fold in the whipped cream, do not whip or stir because you want to keep your pudding light, fluffy, and airy.
- Now, you're going to set your pudding aside. I use my trifle bowl, which is typically used for layered desserts.
- I start to layer my vanilla wafers at the bottom of the bowl as well as around.
- Then, I begin to peel and slice my bananas, laying them on top of the wafers.
- After layering in the wafers and bananas, add a generous amount of pudding. You will continue this process of layering until you reach the top of the trifle bowl.
- Now that you've completed your banana pudding, you will need to refrigerate until chilled.

- Place mixing bowl in the freezer for at least 10 minutes before using.
- Scoop ice cream into the bowl of an electric stand mixer with the paddle attachment. Beat on medium speed until ice cream is creamy, about a minute, scraping down the sides of the bowl with a spatula as needed.
- Add mix-ins and beat on low speed just a few times until mix-ins are mixed evenly throughout the ice cream.
- Scoop mixture into serving cups and dig in!

- Melt the butter in the microwave, then combine with the cookie crumbs in a bowl.
- After combining well, press this mixture in a 9x13" pan.
- Mix the pudding according to the directions on the package, then add in the pineapple (make sure to drain as much juice as possible)and half of the cool whip.
- Spread the pudding/pineapple mixture on top of the crust.
- Slice the bananas and put them on top of the pudding; top with the remaining Cool Whip.
- Sprinkle the nuts over the cool whip; drizzle the chocolate syrup on top to garnish.
- Cover tightly and chill for 2 hours before serving.

- Add heavy whipping cream to the bowl of a stand mixer or large bowl and beat on medium high speed for a minute or two until soft peaks form.
- Add powdered sugar and vanilla extract and continue beating until stiff peaks form. Set aside.
- Add cream cheese to the bowl of a stand mixer or large bowl and beat until smooth. Add sweetened condensed milk and beat until combined.
- Add pudding mixes and milk and beat for 4 to 5 minutes, scraping down the sides of the bowl as needed.
- Fold in two-thirds of the whipped cream.
- Line a 9 x13 baking dish with one layer of Nilla Wafer cookies. Top with half of the banana slices.
- Spread half of the pudding mixture on top of the bananas and add another layer of Nilla wafers.
- One more layer of banana slices, the remaining pudding mixture and then top with remaining whipped cream.
- Cover and refrigerate for at least 4 hours or overnight.
- Remove from refrigerator and garnish as desired. Mini Nilla Wafers, banana slices, or wafer crumbs are great ideas! Serve immediately.

- For the Nilla wafer crumble, combine the crumbs with the melted butter. Spread the mixture onto a large baking sheet and bake at 350 degrees for 10-12 minutes, tossing once or twice, until the crumbs are golden and fragrant. They will appear soft right out of the oven, but once they cool on the baking sheet, they will crisp up. Once cool, the crumbs can be stored in an airtight container for 1-2 days.
- To assemble, keep in mind, this isn't rocket science. You can basically layer the components however you like but this is how I did it: Start with a few tablespoons of the crumbles and press into the bottom of an individual trifle dish or similar-type dish. I added each layer to all of the six dishes before proceeding with the next layer. Now add a dollop of vanilla pudding to cover the crumbles. Spread the pudding to the edges of the dish(es). Add slices of banana to cover the pudding. Top the bananas with a spoonful of sweetened whipped cream, spreading to the edges of the dish. Add another layer of Nilla Wafer crumbles and a drizzle of caramel. Another layer of pudding, bananas, whipped cream, a sprinkle of crumbles on top and a final drizzle of caramel.
- Seriously, once you delve into this heavenly concoction, it won't matter how it's layered. Refrigerate the desserts for 1-2 hours (any longer and the bananas will have a tendency to get brown and mushy). Serve chilled.
