Steps:
- In a small bowl, cream butter and sugar until smooth. Add egg; mix well. Beat in the banana, buttermilk and vanilla. Combine the flour, oats, baking soda and salt; add to creamed mixture just until moistened. Fold in cherries. , Fill paper-lined muffin cups three-fourths full. Sprinkle with walnuts. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack to cool completely.

BANANA CHERRY CAKE
This is a moist, fruity cake. It can be made as a regular cake or in a bundt tin (I used a 10" bundt tin). Cherries can be substituted for blueberries, raspberries - anything you have on hand. The cooking time shown is for a non-fan oven.

Steps:
- In a large bowl, combine the flour, baking powder, salt, suger.
- In a smaller bowl, mash the bananas.
- To the bananas, add the eggs, vanilla extract, milk and oil and mix. Combine cherries into the mix.
- Add the wet mixture to the other dry ingredients in the large bowl and mix.
- Spray the baking tin with cooking spray (alternatively, grease tin with butter).
- Pour batter into baking tin and cook in a oven pre-heated to 375 degrees for 1 hour 10 minutes.
- Remove cake from oven and allow to cool for 20 minutes. Turn cake onto a plate and allow to cool.

- In a small saucepan, melt 1/2 cup of butter; stir in wafer crumbs. Press into a 9-in. pie plate. In a small bowl, cream the remaining butter and confectioners' sugar until light and fluffy. Spread over crust., In a large bowl, beat cream until it begins to thicken. Add the sugar and cocoa; beat until stiff peaks form. Fold in the walnuts, banana and maraschino cherries. , Spoon into crust. Cover and refrigerate for 8 hours or overnight. Garnish with whipped topping, chocolate curls and cherries.

- Heat oven to 325°F. Wrap outside bottom and side of 10-inch springform pan with heavy-duty foil to prevent leaking. Spray inside bottom and side of pan with cooking spray. In small bowl, mix crust ingredients. Press in bottom and 1 1/2 inches up side of pan. Bake 10 to 12 minutes or until set. Reduce oven temperature to 300°F. Cool crust 10 minutes.
- Meanwhile, in large bowl, beat cream cheese, granulated sugar and vanilla with electric mixer on medium speed until smooth and creamy. Beat in eggs, one at a time, just until blended. Beat in bananas until well blended. Pour filling into crust.
- Bake at 300°F 1 hour to 1 hour 10 minutes or until edge of cheesecake is set at least 2 inches from edge of pan but center of cheesecake still jiggles slightly when moved. Turn oven off; open oven door at least 4 inches. Let cheesecake remain in oven 30 minutes. Run small metal spatula around edge of pan to loosen cheesecake. Cool in pan on cooling rack 30 minutes. Refrigerate at least 6 hours or overnight.
- To serve, run small metal spatula around edge of pan; carefully remove foil and side of pan. In chilled medium bowl, beat whipping cream and powdered sugar with electric mixer on high speed until soft peaks form. Spread over cheesecake. Garnish with cherries. Cover; refrigerate any remaining cheesecake.

- Preheat oven to 350 degrees F (175 degrees C). Grease two 8x4-inch loaf pans.
- Beat white sugar, brown sugar, butter, and applesauce together in a bowl using an electric mixer until light and fluffy. Beat egg and egg whites into sugar mixture; stir in bananas, vanilla extract, and cinnamon. Mix flour, alternating with buttermilk, into sugar mixture until batter is well mixed; fold in pineapple and cherries. Pour batter into the prepared pans.

CHERRY BANANA BREAD
I plan on making this for the holidays and serving it with vanilla ice cream and chocolate sauce. A faux banana split complete with bread? What else could be better? The original version of this recipe is from Easy Home Cooking. I've listed vegan alternatives for those who want to make the bread without animal products.

Steps:
- Drain maraschino cherries, reserving 2 Tablespoons juice.
- Cut cherries into quarters.
- Combine flour, baking powder, and salt; set aside.
- Combine sugar, butter, eggs [or ONE mashed banana], and reserved cherry juice in large bowl. Beat with electric mixer at medium speed 3-4 minutes or until well mixed.
- Alternate between adding flour mixture and mashed bananas, beginning and ending with the flour mixture. If the mixture seems a bit too dry, you might want to try adding some water at the end. I suggest adding it a teaspoon or so at a time.
- Stir in drained cherries.
- Grease a loaf pan and spread batter evenly in pan.
- Bake in preheated 350 degree oven for 1 hour or until brown.
- Remove from pan and let cool on wire rack. To store, wrap in plastic wrap or foil and keep in a cool, dry place.
