Steps:
- Preheat oven to 350F and lightly grease and flour a 9x13 baking pan. Set aside.
- Combine butter and sugar in the bowl of a stand mixer (or in a large bowl and use an electric mixer). Beat until well-combined, then stir in mashed bananas.
- Add eggs, stirring well after each addition, and then add sour cream and vanilla extract and stir well.
- In a separate, medium-sized bowl, whisk together your flour, baking powder, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to wet, stirring until completely combined (be sure to scrape down the sides and bottom of the bowl). I prefer to do this with a spatula to avoid over-mixing the batter.
- Pour batter evenly into prepared 9x13 pan. Prepare Streusel.

PEANUT-BUTTER-BANANA COFFEECAKE
For a hostess with a houseful of guests, a variety of festive breads, from a peanut butter coffeecake to a yeasted dessert roll studded with cardamom, laced with honey and stuffed with blue cheese, can satisfy a multiplicity of appetites. They can be served with coffee for breakfast or with cheese and soup for lunch or become part of the evening's bread basket. But expediency is the least of it. Specialty breads, whether they're made from nuts, fruit or vegetables, taste good. They make the house smell warm and cozy, and they make the baker feel like Santa Claus anytime of year.

- Add 1/2 cup (8 tablespoons) of unsalted butter to a small frying pan. Cook over low heat, stirring until it browns. It will foam up, then turn brown. Keep stirring the entire time. Once it turns brown the foam will diminish and the butter will become golden. Remove from heat. You are using this butter for both the cake and streusel.
- Mix sugar, 1/4 cup of the browned butter, and egg in a large bowl. Stir in baking powder and salt, then stir in mashed bananas. Whisk in flour and milk stir until just combined. Pour in prepared pan.
- Make the crumb topping: stir together brown sugar, flour, cinnamon, and remaining 1/4 cup browned butter, and nuts, if using. I like to stir them together with a fork.
