THE BEST EASY CAKE RECIPE: CRATER CAKE
This rendition of the classic Crater Cake is a super easy cake recipe with layers of banana bread cake, cinnamon, brown sugar, and chocolate chips!

Steps:
- Preheat your oven to 350°F
- Cream together room temperature butter and sugar with a hand mixer or with the paddle attachment of your stand mixer. Add beaten eggs and beat this mixture until smooth. Add vanilla and mashed bananas. Mix again until smooth.
- Sift flour, powder, and baking soda. Add this dry mixture to the banana mixture, alternating with sour cream. (I add a scoop of dry mixture, a scoop of sour cream, and keep mixing and repeating until all ingredients are used up)
- Pour half the cake batter into a greased 9 x 13 pan. Combine cinnamon and brown sugar. Sprinkle half the mixture over batter in pan. Top with half the chocolate chips. Repeat, so you have two layers of cake and two layers of the cinnamon/brown sugar/chocolate (this will be your top layer).
- Bake @ 350 for 50-55 minutes, until the center of the cake is set.

- Cream together butter, oil and sugar.
- Add beaten eggs and beat until smooth.

BANANA SNACKING CAKE WITH SALTED CARAMEL GLAZE
This buttery snacking cake is a bit like banana bread, but richer, and topped with a sticky caramel frosting that is dotted with crunchy flakes of sea salt. The frosting, made from brown sugar and heavy cream, is easier than a classic caramel, but just as compelling, with the sea salt contrasting perfectly with its sweetness. It's important to use ripe bananas here. Soft, spotty ones with dark yellow skins will be the sweetest and most complex. Firm, pale yellow bananas just don't have enough intensity to flavor the cake.

- Heat oven to 350 degrees. Grease a 9-by-9-inch pan, and then line with parchment paper, letting the two long ends hang over the edges by at least 2 inches.
- In a large bowl, whisk together flour, granulated sugar, baking soda and salt. Whisk in bananas, melted butter, sour cream, brown sugar, eggs and vanilla.
- Scrape into baking pan and smooth the top. Bake until the top springs back when lightly pressed in the center, and a toothpick inserted in the center comes out clean, about 25 minutes. Let cool completely.
- When cake is cool, make the glaze: In a medium or large pot (not a small one because the mixture will bubble up), combine butter, brown sugar, heavy cream and salt. Bring to a full boil and continue to boil over medium heat for 1 minute. Remove from heat and let sit for 5 minutes.
- Whisk in confectioners' sugar until smooth, then immediately pour over cooled cake. Spread evenly across cake and let set for at least 30 minutes. Sprinkle with flaky sea salt before serving.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch layer cake pans. Sift together flour, baking powder, soda, and salt; set aside.
- In a large bowl, combine the shortening, sugar, eggs, and vanilla. Beat well. Blend in the buttermilk. Add sifted flour mixture alternately with mashed banana to the egg mixture while beating. Pour batter into prepared pans.
- Bake cake for 30 to 35 minutes. Remove from pans, and cool on wire racks. Fill and frost the cake with whipped cream.

BANANA SOUR CREAM CAKE - LIGHT VERSION
Laurie Sanders (rhinemaidens3) posted the original version of this cake, and it sounded delicious, but called for oil, whole eggs, and butter. Since I'm on a weight loss journey, the first thing I always try to do when I see a recipe that sounds good is figure out how to "lighten" it up. This is my version. Keep in mind, I used the "light" products, but I will probably push the envelope and try some fat free items next time.

- Preheat oven to 350*. While the oven is preheating, mix the first 5 ingredients together in a mixing bowl for 2 1/2 minutes. Pour into a cake pan that has been sprayed with pan spray, and bake for approx. 30 minutes.
- While cake is baking, whip the ICBINB - Light and the whipped cream cheese together for about 2 minutes, then add vanilla and powdered sugar and blend well. After cake cools, spread frosting over the top.
- I cut this cake into 24 pieces. Nutrition Information PER PIECE: 166 calories, 4.5 grams of fat, 30 grams carbohydrates. It tastes very rich, and will satisfy a sweet tooth without wrecking your meal plan.
BANANA UPSIDE-DOWN CAKE
Easy and yummy. Bananas, brown sugar and pecans are baked under a banana cake mix. The pans are then inverted so the bananas end up on top!
