Yummy cookies!! Great when you have leftover bananas that are too soft to eat .. they smell heavenly while baking, and keep well in the fridge ... I don't add the nuts, but you can if you like ..

Steps:
- Preheat oven to 375°F.
- In a large bowl, combine butter, sugar and eggs.
- Add bananas and vanilla, mix well.
- Add the rest of the ingredients, with dates and nuts last.
- Drop dough onto cookie sheet (sprayed with non-stick spray), and flatten slightly.
- Bake 12 minutes or until done.

- In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in the eggs, bananas and vanilla. Combine the flour, baking soda and salt; stir into creamed mixture just until blended., Transfer to a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until a toothpick inserted in the center comes out clean. Cool in pan on a wire rack., For frosting, in a small bowl, beat cream cheese and butter until fluffy. Add confectioners' sugar and vanilla; beat until smooth. Frost bars.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking pan.
- In a mixing bowl, beat together the peanut butter, brown sugar, and butter with an electric mixer until smooth and fluffy. Beat in the egg and vanilla extract, then the banana. Stir in the oats, flour, wheat germ, and baking soda until completely combined. Spread in prepared baking pan.
- Bake in the preheated oven until set and lightly browned, 20 to 25 minutes. Remove from oven and cool in pan on wire rack before cutting into bars.

- In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
- Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
- In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
- Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

- In a medium sized bowl, mash your bananas until they are almost liquid. I used an immersion blender. Stir in all ingredients, except the chocolate chips.
- Pat mixture into pan. Sprinkle with chocolate chips and then pat them into mixture so that they are resting on top.
- Bake for abut 30 minutes or until the edges begin to crisp up. You can also bake these longer if you want them crisper. Remove from oven and cool. Slice into bars and serve. Leftovers keep a good week, if they last that long.
