Steps:
- Melt the chocolate in a double boiler or in a microwave in a bowl until melted, stirring every 15-20 seconds.
- Place the banana slices in the bottom of warm fondue pot.
- Pour the chocolate over the bananas.
- Add the caramel and stir gently.
- Add the banana liqueur and rum and stir gently to combine.
- Optional- you can flambe at this point.
- Keep fondue warm over low heat.

- Melt butter over low heat. Add brown sugar, cinnamon & vanilla extract, mix until sugar dissolves. Remove from heat; add banana liqueur and Capt. Morgan's Spiced Rum.
- Transfer to 2 quart container. Refrigerate. Slurry Shelf Life: 7 Days.
- Set aside in a dressing boat 1 ounce of slurry and banana. Turn burner to high. Place 4 ounces white chocolate into fondue pot liner. Heat to 125 degrees. When hot, add slurry to white chocolate. Flambé with 151 proof Rum, allow sugar to begin to caramelize. Sprinkle cinnamon into flames to create sparkle effect, mix chocolate mixture well, turn burner to low and enjoy!

- Melt the butter in a heavy skillet over a medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
- Peel the bananas and slice them on the bias inside the peel. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Then - and this is where you need to be a little careful - stir in the rum. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without flambeing it.
- Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
- Spoon bananas Foster over French toast, waffles or crepes. Substitute peaches, pears or cherries for the bananas. Of course, then it probably wouldn't be considered bananas Foster.

- Cut bananas in half lengthwise; set aside.
- In skillet or chafing dish, melt butter over medium heat; stir in sugar until melted.
- Add bananas, cut side down; cook, turning once, for about 5 minutes or until just barely tender.
- Sprinkle with cinnamon and nutmeg.

- BACON & BRIE CHEESE FONDUE Mix the shredded Emmenthaler and Gruyere Cheese and toss it with cornstarch to aid in thickening and improve the viscosity of the fondue. Place a metal bowl over a saucepan filled with 2 inches of water. You may also use a conventional double boiler. Bring the water to a boil over high heat. When steam is visible, reduce the heat to medium. Add the white wine to bowl, and then add the Brie cheese. Using a fork, stir for approximately 30 seconds, slightly breaking up the Brie cheese in the base. Add the bacon and continue to stir the contents of the bowl. Add 1/3 of the shredded cheese blend and stir using the fork until fully incorporated into liquid. Then add another 1/3 and continue stirring until melted. Last, add the rest of the cheese and stir using a circular whipping motion until smooth. Squeeze the lemon juice into the melted fondue and then add fresh ground black pepper. Fold these two ingredients into the cheese fondue 4-5 times. Top the fondue with the fresh chopped scallions. Use dippers such as bread cubes, vegetables, cubed sausage, and cornichons. FLAMING TURTLE CHOCOLATE FONDUE Heat melted chocolate in desired fondue pot. Pour the caramel syrup in a pool at the center of the warm chocolate. Add the rum to the pot and light with a long fireplace lighter. As the rum burns away, carefully stir the mixture together. Garnish with chopped pecans. Use dippers such as fresh fruits and berries, pound cake, brownies, cheesecake, etc. The possibilities are endless so be creative, have fun and enjoy! BANANAS FOSTER FONDUE Melt the chocolate in the top of a double boiler set over simmering water, stirring constantly; or place the chocolate in a microwave-safe bowl and microwave until melted, stirring every 30 to 45 seconds. Place the banana slices in the bottom of a warm fondue pot. Pour the chocolate over the bananas. Add the caramel and stir gently. Add the liqueur and rum and stir gently to combine. Keep fondue warm over low heat.

The New York Times food editor Jane Nickerson first published this recipe in 1957 as part of an article on New Orleans-style Creole cooking. Adapted from Brennan's restaurant, this recipe is meant to be a showstopper. But it's deceptively easy. Be sure to have a lid at the ready to extinguish the flame in case things get out of hand. If you cannot find banana liqueur, just add a teaspoon more rum.
