PRALINE SWEET POTATOES

The best sweet potatoes you will ever eat!

4 cups mashed sweet potatoes
½ cup white sugar
2 tablespoons vanilla extract
4 eggs, beaten
½ pint heavy cream
¼ pound butter
1 cup packed brown sugar
½ cup all-purpose flour
1 ¼ cups chopped pecans

Steps:

  • Butter one 2 quart casserole dish. Preheat oven to 350 degrees F (175 degrees C).
  • In a mixing bowl, combine the sweet potatoes, sugar, vanilla extract, eggs and cream. Blend well, and spread evenly in casserole dish.
  • Prepare the topping by combining the butter, brown sugar, flour and pecans. Mix until crumbly, and sprinkle over sweet potato mixture.
  • Bake for 30 minutes in the preheated oven.

3 cups cooked mashed peeled sweet potatoes, (about 3-4 sweet potatoes)
2/3 cup of 1 (14-ounce) can fat-free sweetened condensed milk
2 egg whites
1/4 cup orange juice
Praline Topping (recipe follows)
For the Praline Topping:
2/3 cup light brown sugar
1/3 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/4 cup butter, melted
1 teaspoon vanilla extract
1 cup chopped pecans

Steps:

  • 1 Preheat oven 350°F. Coat 2-quart casserole with nonstick cooking spray. 2 In bowl, cream together all ingredients except the topping with potato masher or mixer until blended. 3 To make the Praline Topping: 4 In bowl, mix together brown sugar, flour, and cinnamon. 5 Stir in butter, vanilla, and pecans until crumbly. 6 Transfer to prepared dish and sprinkle with Praline Topping. 7 Bake 40-45 minutes or until thoroughly heated and topping is brown and crumbly.

2 large eggs, lightly beaten
6 cups mashed sweet potatoes (about 4 large)
1/2 cup sugar
1/2 cup butter, softened
1/3 cup 2% milk
1 teaspoon vanilla extract
TOPPING:
1/3 cup butter, melted
1 cup packed brown sugar
1 cup chopped pecans
1/2 cup all-purpose flour

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, sweet potatoes, sugar, butter, milk and vanilla. Transfer to a greased 11x7-in. baking dish. In a small bowl, mix butter, brown sugar, pecans and flour; sprinkle over top. Bake, uncovered, 50-60 minutes or until top is browned.

1/4 cup flour

Steps:

  • FILLING: Mash potatoes in a medium sized bowl. Add all the other filling ingredients; mix well. Pour into a greased deep dish pie pan or 8x8 deep casserole dish.
  • TOPPING: Mix all ingredients well and sprinkle over top of potato mixture.
  • Bake at 350°F for 30 minutes.

1 serving cooking spray
1 cup all-purpose flour
⅔ cup packed brown sugar
¼ cup chopped pecans
¼ cup stick margarine, melted
¼ teaspoon ground cinnamon
4 each sweet potatoes, peeled and halved
1 (5 ounce) can evaporated milk
½ cup white sugar
1 large egg, beaten
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Prepare a 2-quart casserole dish with cooking spray.
  • Mix flour, brown sugar, pecans, margarine, and cinnamon together in a bowl.
  • Put potatoes into a Dutch oven with enough water to cover by a few inches; bring to a boil, reduce heat to medium-low, and simmer until potatoes are tender, about 30 minutes. Drain water from potatoes and put potatoes into a large bowl.
  • Mash sweet potatoes with a potato masher. Stir evaporated milk, white sugar, egg, and vanilla extract with the mashed sweet potato until smooth; add about 2/3 of the praline topping, stir, and spread the mixture into the prepared baking dish. Top with remaining praline topping.
  • Bake in preheated oven until browning around the edges, about 45 minutes.
