BANANA GRANOLA BARS (NO-BAKE, VEGAN GLUTEN-FREE)
These banana granola bars are super easy to make, are no-bake and can be made vegan and gluten-free!

Steps:
- Line a muffin pan with paper liners, or use a silicone muffin pan for easy removal.
- Mash the bananas. Add wet ingredients and cocoa powder and mix well. Add all other ingredients, mix well then press into prepared muffin tin.
- Freeze at least 60 minutes before enjoying. We like keeping them in the freezer for easy snacks. In the past we've used a homemade cereal that stays crunchy but more often than not I'll use homemade granola or even an equal amount of nuts but use whatever you have. I've even used toasted buckwheat before and it works really well and stays crunchy.

- In a large microwave-safe bowl or stovetop, combine your tahini and maple syrup and heat until melted.
- Add your rolled oats and mix until combined. Fold in your dried fruits and seeds and mix very well, until fully incorporated.
- Transfer your granola bar batter into the lined pan and press firmly into place. Refrigerate for at least an hour, until the bars have firmed up. Cut into 16 small bars or 8 large ones.

- Place sliced bananas on a parchment lined baking sheet. Add oats and nuts to another baking dish. Bake the sliced banana at 375 deg F (190 C) for 15 mins, Reduce temperature to 350 deg f (180 C) then add the nuts and oats to the oven and bake for another 15 mins. Let cool.
- Alternatively, you can cook the bananas in a skillet with 2-3 tbsp non-dairy milk until caramelizing.
- Add the toasted nuts and half of the oats to a food processor. Pulse to break the nuts into a coarse meal, then add dates along with the caramelized banana, and pulse to break down the bananas a bit. Add cinnamon, salt, the other half of the oats and pulse again until a dough like state. (If your dates are not very soft, process with the banana to break them down before this step)
