BREAKFAST PANINI

Vegetable oil cooking spray
16 thin slices pancetta
1/2 cup sugar
1/2 cup water
12 dried black mission figs
3 tablespoons brandy or apple juice
1/2 cup hazelnuts, toasted (see Cook's Notes)
4 ciabatta rolls, halved lengthwise
8 ounces Brie, rind removed, cut into 8 slices (see Cook's Notes)

Steps:

  • For the pancetta: Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F. Spray 2 baking sheets with vegetable oil cooking spray. Arrange the pancetta in a single layer on each baking sheet. Bake until golden and crispy, about 10 to 12 minutes.
  • For the jam: In a small saucepan, combine the sugar, water, figs, and brandy (or apple juice) over medium heat. Bring to a boil, reduce the heat, and simmer for 5 minutes, stirring occasionally, until the sugar has dissolved. Remove the pan from the heat and allow the syrup to cool slightly, about 10 minutes. Pour into a food processor and add the hazelnuts. Blend until smooth and thick.
  • Preheat a panini press. Spread the bottom half of each roll with the jam. Place 4 slices of cooked pancetta on top and add 2 slices of cheese. Place the top half of the roll on top of the cheese. Grill in a panini maker until the bread is toasted and the cheese has melted, 4 to 5 minutes. Cool slightly and serve.
  • Cook's Notes:
  • -To toast the hazelnuts, arrange in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 8 to 10 minutes until lightly toasted. Cool completely before using.
  • - For easier slicing, freeze the cheese for 15 minutes

When I'm in a savory mod, I like lots of green veggies scrambled in egg, a light sprinkle of cheese and a slice of prosciutto. When I'm in a sweet mood, I like to go all out and prepare a banana and hazelnut chocolate spread panini. With freshly-made bread, I feel like I am sitting in a lovely café bakery enjoying my breakfast.

All-purpose flour, for dusting
1 13-oz jar of hazelnut and chocolate spread
1 banana, sliced

Steps:

  • Preheat oven to 350°F. Divide the biscuit dough in 8 sections. On a floured surface, roll each section into a flat square of approximately 1/4-inch.
  • On an ungreased baking sheet, place flattened dough sections and bake for 15 minutes or until golden brown.
  • Remove from oven and let cool. Carefully split flat biscuit open with a knife. Stuff with chocolate hazelnut spread, slices of banana and enjoy.

3 firm-ripe bananas, thinly sliced
1/4 cup (1/2 stick) unsalted butter

Steps:

  • Spread 1 tablespoon chocolate-hazelnut spread on 4 bread slices. Layer with bananas and top with remaining bread.
  • In a grill pan or large skillet, melt 2 tablespoons butter over medium. Cook 2 sandwiches, pressing with a heavy skillet, until bread is golden and toasted and spread is melted, 3 to 5 minutes, flipping once. Repeat with remaining butter and sandwiches. Serve warm.

1/2 cup melted and cooled coconut oil
3 very ripe bananas
2 large eggs, at room temperature
1/2 cup plain Greek yogurt
1 cup coconut sugar or granulated sugar
1/2 teaspoon kosher salt
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 cup chopped hazelnuts, optional
1/2 cup bittersweet chocolate chips
1/3 cup chocolate hazelnut spread, warmed if needed to make spreadable

Steps:

  • Preheat the oven to 350 degrees F. Lightly brush the inside of a 10-by-5-inch loaf pan with coconut oil and line with a strip of parchment paper. Set aside.
  • Mash the bananas with the back of a fork in a large bowl until only a few lumps remain. Add the eggs and mix until smooth. Using the fork, whisk in the coconut oil, yogurt, sugar, salt and vanilla until smooth and incorporated. Add the flour and baking soda and use a rubber spatula to stir until combined, being careful not to overmix. Fold in the hazelnuts, if using, and the chocolate chips.
  • Pour half of the batter into the prepared pan. Dollop half of the hazelnut spread over the top of the batter. Swirl the spread into the batter using the tip of a knife. Top with the remaining batter and repeat with the remaining hazelnut spread. Bake until the bread is firm to the touch and a toothpick inserted in the center comes out with very few crumbs (the streaks of hazelnut spread will still be wet), 1 hour to 1 hour and 5 minutes. Allow to cool for 30 minutes in the pan.
  • Turn the pan on its side and let rest an additional 30 minutes. Loosen the edges with a knife and remove to a wire rack to cool completely. The bread will keep for 4 days at room temperature.

FREEZER BREAKFAST PANINI

12 tablespoons salted butter, softened
24 slices sourdough bread
18 large eggs
3/4 cup half-and-half
Kosher salt and freshly ground black pepper
2 pounds shaved honey ham
1/2 cup mayonnaise
Juice of 1 lime
Hot sauce, for seasoning
Two 15-ounce cans whole green chiles, drained, preferably Hatch brand
24 slices Monterey Jack cheese

Steps:

  • Heat a panini press. Butter each piece of bread on one side, reserving 4 tablespoons of the butter. Lay 4 pieces of the bread, buttered-side down, on the panini press. Top with another piece of bread, buttered-side up. Press the bread until golden and slightly flattened, 2 to 3 minutes. Remove and repeat two more times until all the bread is toasted on one side. Set aside.
  • Mix together the eggs, half-and-half, 1 teaspoon salt and 1/2 teaspoon black pepper. Set aside.
  • Melt 2 tablespoons butter in a large nonstick skillet over medium-high heat. Spread the ham in the pan and sear until caramelized in spots, flipping once, 2 to 3 minutes total. Remove to a sheet pan and allow to cool.
  • Lower the heat to medium and melt the remaining 2 tablespoons butter in the skillet. Scramble the egg mixture until just set, 5 to 7 minutes. Remove the eggs to a sheet pan and spread them out to cool.
  • Meanwhile, mix together the mayonnaise, lime juice, 1/2 teaspoon kosher salt and some hot sauce to taste in a small bowl.
  • When the all the components have cooled, assemble the sandwiches by spreading all the pieces of the toasted bread with 1 tablespoon of the mayo mix. Next, lay a whole green chile on top of the mayo. Evenly distribute the shaved ham and scrambled eggs on top of the chiles. Top each with two slices of cheese and then the remaining slice of bread.
  • Wrap each sandwich individually in foil and place into 2 large resealable plastic bags. Place in the freezer and store up to 1 month.
  • To cook: Preheat the oven to 350 degrees F. Remove the sandwiches from the freezer and bake until heated through and the cheese has melted, 20 to 25 minutes.
  • Carefully remove from the oven, unwrap and enjoy.

2 slices sourdough bread
2 tablespoons chocolate-hazelnut spread
1 tablespoon marshmallow creme
4 strawberries, sliced
2 tablespoons salted butter, softened
1 teaspoon powdered sugar

Steps:

  • Toast the almonds in a pan over medium heat until golden brown, 2 to 3 minutes.
  • Spread one slice of the sourdough bread with a thick layer of the chocolate-hazelnut spread. Spread the other slice of bread with the marshmallow creme. Layer the strawberries onto the chocolate-hazelnut spread and top with a sprinkling of almonds. Then place the other slice of bread on top, marshmallow creme-side down. Press the 2 slices together.
  • Butter one side of the sandwich and put it on a hot panini maker butter-side down. Butter the other side, close the lid and cook until the sandwich is toasted and warmed through. (If you do not have a panini maker, you can grill the sandwich in a skillet, laying another heavy skillet on top of the sandwich to press it together. Turn to grill the other side in the same way.)
  • Sprinkle with powdered sugar, cut in half and serve!

GRILLED BANANA AND NUTELLA PANINI

  • Place the bananas in a bowl and mash until smooth.
  • Place the slices of bread on a flat surface and spread each slice with some of the hazelnut spread. Spread the mashed banana over 6 of the slices and combine the slices to make 6 sandwiches.
  • Heat the grill to medium-high.

1/2 cup unsalted butter, cold
1 1/2 cups all-purpose flour
1 pinch salt
2 -4 tablespoons cold water
2/3 cup hazelnuts, plus a few for decoration
1 cup granulated sugar
2/3 cup unsalted butter, softened
4 large egg whites
2/3 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup mashed ripe banana
1 tablespoon lemon juice
3 ounces semi-sweet chocolate chips

Steps:

  • Make the pastry:.
  • In a food processor, combine the cold butter, flour and salt. Pulse together until you get a fine crumb with a few pea-sized lumps of butter. Drizzle in 2 tbsp of the cold water and pulse again. Pinch some of the mixture between your fingertips, if it holds together it's done. If it doesn't drizzle in another tablespoon or two of water and pulse again.
  • Tip out onto a piece of plastic wrap, press together into a ball and press down into a disk. Wrap in the plastic wrap and chill for 1 hour.
  • Make the filling:.
  • Meanwhile wipe out the food processor. Place the 2/3 cup of hazelnuts into the food processor with half of the sugar and blend until very fine in texture. Add the butter and blend again until smooth. Add the egg whites, flour, baking powder and salt. Blend again until smooth.
  • Mix the mashed banana with the sugar and lemon juice in a small bowl. Set aside.
  • Blind bake the pastry:.
  • Preheat the oven to 350oF.
  • Roll the chilled pastry out between two pieces of baking paper to just slightly larger than an 8-inch tart tin. Peel off the top layer of baking paper, flip the pastry into the tin and remove the other layer of baking paper. Gently press the pastry down into the tin and cut off any excess around the edges.
  • Crumple up one of the pieces of baking paper you were using, un crumple it and lay it into the lined tart tin. Fill with baking beans and bake for 10 minutes with the baking paper inside. Lift out the baking paper and baking beans and cook the pastry for a further 5 minutes.
  • Fill and bake:.
  • Remove the tart tin from the oven, spread with the mashed banana then cover with the hazelnut mixture you made earlier and top with chocolate chips and the extra hazelnuts. Bake for 25-30 minutes until golden and a toothpick inserted into the centre of the tart comes out clean. Let cool for 10 minutes before slicing and serving.
