SPICY LEMON CHICKEN KABOBS
When I see Meyer lemons in the store, it must be spring. I like using them for these easy chicken kabobs, but regular grilled lemons still add the signature smoky tang. —Terri Crandall, Gardnerville, Nevada

HOMEMADE SPICY CHICKEN SAUSAGE
I was tired of the bland chicken/turkey sausage that I have been buying in the store. The ones that are theoretically 'good' are made with pork casings (intestines), and we do not eat pork. Here is a recipe that you can make at home, pat out into small patties, and cook for meals. I hope you enjoy it. My kids approve of this recipe.

- Slice your chicken breast into large chunks that are all equal size! This will ensure that they all cook evenly. To a large bowl, add the diced chicken. Add 3 tbsp olive oil, 3 tbsp chicken rub seasoning, about 2 tbsp of hot sauce and juice of ½ of a large lemon. Mix to combine and let this sit in the refrigerator to marinate for at least 30 minutes!
- While it’s marinating, dice your veggies into similar size pieces as the chicken! You want them bite size and roughly around the same size. Set these aside.
- Once the chicken is done marinating, assemble the kabobs! I used metal skewers and highly recommend those. Begin placing the ingredients onto the skewer, alternating between veggie and chicken pieces until they are full.
- Heat up your grill until it’s hot and ready to go. Place the kabobs directly on the grill. Grill on each side for 5 minutes or until the meat is fully cooked through. Remove from grill.
