Vanilla Panna Cotta with Poached Apricots image

The floral sweetness and slightly astringent tanginess of poached apricots makes them an ideal topping for mellow-flavored panna cotta.

3 teaspoons unflavored gelatin
4 cups heavy cream
1 cup sugar
1/2 vanilla bean, split lengthwise and scraped
16 Poached Apricot Halves

Steps:

  • Prepare an ice bath; set aside. Place 3 tablespoons cold water in a large bowl, and sprinkle with gelatin. Let stand until gelatin has softened, about 5 minutes.
  • Combine the cream and sugar in a medium saucepan over medium-high heat. Add vanilla bean and scrapings. Gently simmer mixture until bubbles form around sides of pan, about 5 minutes. Remove from heat, and let cool slightly. Discard vanilla pod.
  • Pour hot cream mixture into gelatin mixture, and whisk until combined. Set bowl in the ice bath. Let cool completely, stirring frequently. Strain the mixture through a fine sieve into a medium bowl. Divide among eight custard cups. Cover tightly with plastic wrap, and chill until set, at least 4 hours or overnight.
  • To serve, remove the custard from refrigerator, uncover, and top each portion with two poached apricot halves.

2 cups heavy cream
1 vanilla bean
1/2 cup sugar
1 1/2 teaspoons unflavored gelatin (about 1/2 packet)
1/2 cup whole milk
1/2 cup whole-milk Greek yogurt
Sliced strawberries and fresh mint, for garnish (optional)

Steps:

  • Place the cream in a saucepan. Halve the vanilla bean lengthwise; scrape out the seeds with a knife, then add the seeds and pod to the saucepan. Add the sugar and bring to a simmer over medium-low heat, stirring occasionally. Discard the vanilla pod.
  • Sprinkle the gelatin over the milk in a bowl and let stand until the gelatin softens, about 5 minutes. Stir the gelatin mixture into the hot cream mixture until dissolved, then stir in the yogurt. Divide among six to eight 4-ounce ramekins, cover with plastic wrap and refrigerate until set, at least 6 hours or overnight.
  • Dip each ramekin three-quarters of the way in warm water and invert onto a plate. Garnish each panna cotta with strawberries and mint, if desired.

Steps:

  • Sprinkle gelatin over the water. The gelatin will absorb the water and dissolve, in a process called "blooming."
  • In a small saucepan, combine heavy cream with sugar and cook over medium until it's at the scalding point, or just under a boil.
  • Once the cream has almost reached the boiling point, remove from heat and add vanilla extract and bloomed gelatin. Stir until fully dissolved.
  • Strain panna cotta mixture into desired serving tempered glasses.
  • Allow cream to come to room temperature before chilling in the fridge for 2-4 hours, or until the cream is firm in texture.
  • Top with berries and honey.
  • Enjoy!

There are fruit people, and there are chocolate people. Even chocolate people will lick their plates clean when presented with a refreshing, lemony panna cotta strewn with wine-steeped peaches. Panna cotta makes a nice spring and summertime dessert because it's not so rich that you leave the table feeling stuffed, and the lemon verbena adds a welcome, herbaceous tang. This dish is perfect for company because the panna cotta must be made ahead, and the peaches "cook" while coming to room temperature.

Yield makes about 5 cups , or 10 1/2-cup servings

Number Of Ingredients 14

2 1/2 cups whipping cream
1/2 cup sugar
1/2 cup crème fraîche or Greek-style yogurt
1/4 teaspoon Kosher salt
10 fresh lemon verbena leaves
1 3/4 cups whole milk
1 (1/4-ounce) packet powdered, unflavored gelatin
1 fresh egg
Poached Peaches, for accompaniment (recipe follows)
2 large peaches
1/2 cup sugar
2 cups rosé wine
1 vanilla bean, scraped
1/2 whole nutmeg

Steps:

  • Combine the cream, sugar, crème fraîche, and salt in a saucepan and bring to a boil over medium heat. Remove from the heat and add the lemon verbena, lightly crushing the leaves before adding them to the pot. Allow the mixture to steep for about 1 hour. Keep tasting as it steeps until it has the flavor you want.
  • Meanwhile, pour the milk into a bowl. Add the gelatin and whisk until it dissolves. Add the egg and beat well.
  • Once the cream mixture has steeped, rewarm it over low heat until it reaches a low simmer, then pour over the milk-gelatin mixture and whisk until completely combined. Let the mixture sit for 5 minutes, then pour through a fine-mesh sieve into a heatproof container with a pouring spout.
  • Lightly grease 10 ramekins, plastic cups, or coffee cups and line them up on a baking sheet. Divide the mixture among the ramekins and put in the fridge. Chill until set, about 4 hours. Serve with Poached Peaches.
  • Set a large pot of water on the stove to boil and prepare an ice-water bath in a bowl large enough to hold the peaches. When the water comes to a boil, scald the peaches for 30 seconds. Using a mesh sieve or slotted spoon, transfer the fruit immediately to the ice-water bath to stop the cooking. Using a paring knife, peel the peaches (the skins should now slip off easily) and put the peels in a saucepan. Slice the peaches into eighths and place in a heatproof bowl.
  • Add the sugar, wine, vanilla, and nutmeg to the saucepan and set over high heat. Bring the mixture to a boil and continue cooking for 5 minutes longer. Pour the boiling mixture over the peaches and set the fruit aside to cool and macerate in the spiced wine. Serve with the panna cotta.

1 tablespoon gelatin powder
1 cup milk, divided
3 cups whipping cream
1/2 cup sugar
1 teaspoon vanilla
assorted seasonal fruit
mint, for decoration

Steps:

  • In a large bowl, add gelatin to 1/2 cup cold milk and let it soften.
  • In saucepan, combine whipping cream, 1/2 cup milk, sugar and vanilla and bring to a boil. Pour over gelatin mixture and stir until completely dissolved.
  • Fill a sink with cold water and add some ice cubes. Carefully, set the bowl over the very cold water and chill 1/2 hour, stirring ocassionaly, until almost set.
  • Pour mixture into 8 individual 1/2 ramekin dishes and store in the fridge. cover with plastic if making the night before.
  • To serve: Quickly, dip ramekins in warm water to loosen sides. Invert onto individual serving plates, Arrange fruit around panna cotta.

2 teaspoons gelatin
200 ml milk
275 g single cream
30 g sugar
1 teaspoon lemon zest
1/2 pod vanilla
4 passion fruit

Steps:

  • Combine the gelatine and 100ml of the milk in a bowl and leave for 10 minutes.
  • Put the remaining milk, the cream, sugar, zest, vanilla pod and seeds in a heavy-based pan, and bring to the boil. Take off the heat, mix in the gelatine and milk and whisk to dissolve. Cool to room temperature, then strain into a jug and pour into 2 glasses or dariole moulds. Cover and chill for a minimum of 5 hours, or overnight.
  • In a small saucepan, cook the extra 2 tablespoons of sugar and the seeds and juice from the passion fruit for 2 minutes until syrupy. Remove from the heat and allow to cool.
  • Serve the panna cottas in their glasses with the sauce spooned over the top. Alternatively, turn them out onto a plate (dip the dariole moulds into a bowl of boiling water for 30 seconds to loosen before turning out) and serve with the passion fruit sauce.
