Steps:
- Trim all fat from bear steak and cut into 2-inch cubes.
- Sear meat on all sides with salt pork in a heavy fry pan.
- Place meat in casserole.
- Add rest of ingredients to fry pan and bring to a boil, stirring constantly.
- Pour sauce over meat in casserole.
- Cover and bake for at least 2 hours in a 325F oven, stirring occasionally until meat is tender.

- Mix all sauce ingredients except ketchup and Worcestershire sauce.
- Simmer 20 minutes, uncovered.
- Add ketchup and Worcestershire sauce and bring to a boil.
- Remove from heat.
- Place bear roast in oven at 325 degrees.
- Roast 3-4 hours or until tender.
- Baste frequently with sauce.
BEARBQ RIBS

- BearBQ Ribs:
- Rub 4 slabs of ribs with BearBQ Butt Rub, and wrap tightly with plastic wrap. Let sit overnight night in refrigerator. Get up next morning make Bloodymary, take ribs out of refrigerator, go out in backyard and start smoker. Add about 4 to 5 hickory chunks soaked in water. When smoker is ready place ribs in rib rack and place on smoker. Temperature should stay around 200 to 250 degrees F. Smoke for about 3 hours, turning once about 1/2 way through the cooking time. After 3 hours mop ribs with BearBQ sauce and wrap in foil, seal tightly and put back on smoker for about 1 hour. Unwrap ribs mop again with sauce and put back on smoker for another 1/2 hour to 1 hour. When ribs are done the bone should be able to be pulled away from the meat easily. Tender as my heart. As a great Cook once said " It ain't rocket science, it's a food of love thang". You just know when they are done.
- In a blender or food processor, puree the onion and garlic with some of the vinegar. Melt butter in large stock pot, add onion and garlic puree, saute for about 5 minutes. Add the ketchup and stir very well. Start adding the rest of the ingredients 1 at a time stirring well and often. Simmer for about 1 hour, stirring frequently.

- Preheat the oven to 350 degrees F.
- Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
- Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
- Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

- Soak wood chips in water for at least 1 hour.
- Preheat an outdoor grill for indirect medium heat, about 350 degrees F (175 degrees C).
- Mix together dark brown sugar, kosher salt, paprika, ground black pepper, and cayenne pepper in a small bowl. Place two half full cans of beer on a baking sheet. Spoon 1 teaspoon seasoning mix into each can. Be careful, this will make the beer foam up and out of the can.
- Rinse chicken under cold running water. Discard giblets and neck from chicken; drain and pat dry. Rub each chicken with 2 tablespoons vegetable oil. Rub the remaining seasoning mix over the entire chicken, inside and out. Fit each chicken over a can of beer with the legs on the bottom; keep upright.
- Drain the wood chips and place them with the coals or in an aluminum pan on or under the grill grate as directed by the grill's manual. Place the two chickens, standing on their cans directly on the grill. Close the lid and barbeque the chicken until no longer pink at the bone and the juices run clear, about 1 hour 30 minutes. An instant-read thermometer inserted into the thickest part of the thigh, near the bone should read 180 degrees F (82 degrees C). Remove the chickens from the grill and discard the beer cans. Cover the chicken with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

- In a medium bowl, add the brown sugar, onion powder, garlic powder, mustard powder, smoked paprika, pepper, tarragon, and salt and stir to combine. Use half of the spice rub to season the entire chicken. Cover with plastic wrap and refrigerate for at least 2 hours or up to overnight.
- Preheat the grill to 350°F (190°C).
