Keto BBQ Ribs image

Going keto? Don't sacrifice flavor. You can enjoy barbecued pork ribs, with as much flavor as you like. If you prefer a spicy version, simply add about 1 teaspoon of cayenne pepper to the rub. This version is mild enough for anyone.

2 tablespoons kosher salt
1 teaspoon smoked paprika
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon ground ginger
¼ teaspoon black pepper
heavy-duty aluminum foil
6 pounds pork ribs
2 cups wood chips
water
vegetable oil
1 cup keto barbecue sauce

Steps:

  • Combine kosher salt, paprika, onion powder, garlic powder, ginger, and pepper in a small bowl.
  • Place one layer of aluminum foil on a baking sheet, leaving about a 2-inch overhang on all sides.
  • Pat the ribs dry using a paper towel and rub spice mixture into both sides of the ribs. Place rib racks, meaty side up, on the prepared baking sheet. Cover with more aluminum foil, and tightly crimp the edges. Refrigerate 8 to 24 hours.
  • Preheat the oven to 225 degrees F (110 degrees C).
  • Place the covered baking sheet on the center rack of the oven and bake for 4 hours. Remove from the oven and rest ribs for 10 minutes.
  • Place the wood chips in a bowl and cover with water. Preheat an outdoor grill for medium heat.
  • Drain wood chips and place in an aluminum foil packet; poke several holes in the packet. Place the wood chip packet on the hottest part of the grill and close the lid.
  • When the chips are smoking, oil the grate where the rib racks will go. Remove ribs from foil and place rib racks on the oiled grate. Brush with 1/2 the barbecue sauce. Close the lid and grill for 5 to 10 minutes, monitoring closely for flare-ups. Turn ribs and baste the other side with the remaining barbecue sauce.
  • Close the lid and grill, again monitoring for flare-ups, for an additional 5 to 10 minutes. Keep turning and basting until the ribs reach your desired color. Slice rib racks into portions and serve with additional barbecue sauce.

1/2 cup water
2 tablespoons canola oil
4 pounds bone-in beef short ribs, trimmed
1 bottle (12 ounces) chili sauce
3/4 cup plum preserves or preserves of choice
2 tablespoons brown sugar
2 tablespoons red wine vinegar
2 tablespoons Worcestershire sauce
2 tablespoons Dijon mustard
1/4 teaspoon ground cloves

Steps:

  • Place onion and water in a 5-qt. slow cooker. In a large skillet, heat oil over medium heat. Brown ribs in batches. Add to slow cooker. Cook, covered, on low 5-6 hours or until meat is tender., In a small saucepan, combine remaining ingredients; cook and stir over medium heat until heated through. , Remove ribs from slow cooker; discard cooking juices. Return ribs to slow cooker. Pour sauce over top. Cook, covered, on high 25-30 minutes or until ribs are nicely coated.

3 pounds beef ribs from the loin (about 7 meaty ribs)
1 large garlic clove, minced
1 tablespoon vegetable oil
1/3 cup ketchup
2 tablespoons Worcestershire sauce
1 teaspoon curry powder

Steps:

  • Prepare grill.
  • On a steamer rack set over simmering water steam beef ribs, covered, 20 minutes.
  • While ribs are steaming, in a small saucepan cook garlic in oil over moderately low heat, stirring, until golden. Stir in ketchup, Worcestershire sauce, and curry powder and simmer, stirring, until thickened slightly, about 1 minute.
  • Transfer ribs to a large plate and sprinkle with salt and pepper to taste. Grill ribs on a rack set 5 to 6 inches over glowing coals, meat sides down, until golden, 2 to 3 minutes. Grill ribs on edges until golden, about 2 minutes on each edge, and grill, bone sides down, until golden, about 3 minutes.
  • Brush ribs with barbecue sauce and grill, continuing to baste, until barely charred, about 1 minute on each side.

oil
1 large onion, chunked
8 ounces hunt's chunky tomato sauce
2/3 cup low-carb ketchup
3 tablespoons tamari or 3 tablespoons soy sauce
2 tablespoons cider vinegar
2 teaspoons hickory liquid smoke
1/4 cup Splenda granular, sugar substitute

Steps:

  • Fry the beef in a large skillet, salt and pepper to taste.
  • Remove from skillet and add onion and sauté until lightly brown.
  • Cut the flanken in half with your kitchen shears.
  • Place in crockpot, add onion and pour sauce over all.
  • Cover and cook on high for one hour, turn heat to low and continue cooking until done. 4-5 hours.
