BARBECUE CHICKEN FOIL PACKETS



Barbecue Chicken Foil Packets image

Tender bbq chicken, potatoes and loads of bacon and cheddar make the perfect summer meal on the grill!

1 ½ pounds baby potatoes (thinly sliced)
2 teaspoons olive oil
1 tablespoon seasoning salt
¼ teaspoon pepper
4 boneless chicken breasts (skinless)
¼ cup bacon bits
⅔ cup cheddar cheese (shredded)
1 cup barbecue sauce (divided)
green onions or chives
4 tablespoons sour cream (optional)

Steps:

  • Preheat grill to medium high heat.
  • Prepare foil packets. Lay out 4 large pieces of heavy duty foil then top each with a large piece of parchment paper (or spray with non stick spray).
  • Place equal amounts of sliced potatoes and onions in the middle of each packet. Drizzle with oil and sprinkle with seasoning salt and pepper.
  • Place a chicken breast on top of potatoes. Brush each side of each chicken breast with barbecue sauce.
  • Wrap up each foil packet by bringing two sides together and rolling it up. Then roll up each open end to seal the packet.
  • Place on hot grill and cook (potatoes down) for about 25 minutes or until potatoes are tender and chicken is cooked through (chicken should be 165°F).
  • Cut open packet, brush chicken with more barbecue sauce if desired and top with cheddar cheese and bacon bits. Place back on grill (do not reseal) to melt about 5 minutes.
  • Garnish with sour cream and chives.

3/4 cup chopped onion
1/2 cup ketchup
1/4 cup lemon juice
3 tablespoons butter
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon ground mustard
1 teaspoon vinegar
1 broiler/fryer chicken (3-1/2 to 4 pounds), cut up and skin removed
Salt and pepper to taste
4 sheets heavy-duty aluminum foil (18 inches x 12 inches)

Steps:

  • In a saucepan, combine the first eight ingredients; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Place 2 pieces of chicken in the center of each piece of foil; fold up edges to hold sauce. Sprinkle chicken with salt and pepper. Spoon sauce over chicken. Bring opposite long edges of foil together over the top and fold down several times. Fold the short ends toward the chicken and crimp tightly to prevent leaks. , Place packets on a baking sheet. Bake at 350° for 1 hour. Carefully open packets and turn down foil. Broil chicken for 5 minutes or until browned.

1/2 teaspoon pepper
2 tablespoons butter, melted
1/2 cup barbecue sauce
1 (15 ounce) can pinto beans, rinsed and drained
barbecue sauce
shredded cheese
chopped green onion

Steps:

  • Tear off 4 (18 x 12 inch) sheets of aluminum foil; lightly grease 1 side of each sheet.
  • Place 2 chicken leggs and 1 ear of corn in center on greased side of each foil sheet. Sprinkle evenly with salt and pepper; drizzle corn evenly with butter. Spoon barbecue sauce evenly over chicken; top evenly with beans.
  • Bring together 2 sides of each foil sheet over ingredients, and double fold with about 1 inch wide folds. Double fold each end to form a packet, leaving room for heat circulation inside packet. Place packets on a baking sheet.
  • Bake at 450F for 40 minutes. carefully open packets to prevent burns from hot steam, (open with open end away from you). Serve with desired toppings.
