With chopped walnuts and loads of chocolate, it's no wonder that Ina Garden's Outrageous Brownies recipe from Food Network comes with a five-star rating.

1 pound unsalted butter
1 pound plus 12 ounces semisweet chocolate chips
6 ounces unsweetened chocolate
6 extra-large eggs
3 tablespoons instant coffee granules
2 tablespoons pure vanilla extract
2 1/4 cups sugar
1 1/4 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
3 cups chopped walnuts

Steps:

  • Preheat oven to 350 degrees F.
  • Butter and flour a 12 x 18 x 1-inch baking sheet.
  • Melt together the butter, 1 pound of chocolate chips, and the unsweetened chocolate in a medium bowl over simmering water. Allow to cool slightly. In a large bowl, stir (do not beat) together the eggs, coffee granules, vanilla, and sugar. Stir the warm chocolate mixture into the egg mixture and allow to cool to room temperature.
  • In a medium bowl, sift together 1 cup of flour, the baking powder, and salt. Add to the cooled chocolate mixture. Toss the walnuts and 12 ounces of chocolate chips in a medium bowl with 1/4 cup of flour, then add them to the chocolate batter. Pour into the baking sheet.
  • Bake for 20 minutes, then rap the baking sheet against the oven shelf to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.

1 1/2 teaspoons pure vanilla extract
1/2 cup plus 1 tablespoon sugar
1/4 cup plus 1 tablespoon all-purpose flour, divided
1 teaspoon baking powder
1/4 teaspoon kosher salt
1 pint vanilla ice cream

Steps:

  • Preheat the oven to 350 degrees. Melt the butter, 4 ounces of chocolate chips, and the unsweetened chocolate together in a medium bowl set over simmering water. Set aside for 15 minutes. In a large bowl, stir (do not beat) together the eggs, coffee, vanilla and sugar. Stir the chocolate mixture into the egg mixture and allow to cool to room temperature. In a medium bowl, sift together 1/4 cup of the flour, the baking powder and salt and add to the chocolate mixture. Toss together the remaining 1/2 cup of chocolate chips and one tablespoon of flour in a medium bowl and add them to the chocolate mixture. Spoon the mixture into five 3 1/2 inch cast iron skillets and place them on a sheet pan. Bake for 25 minutes. Don't over bake! Serve warm with a scoop of ice cream on top.

Steps:

  • Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.
  • Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.
  • Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan.
  • Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.

1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup light brown sugar, lightly packed
1/2 cup granulated sugar
2 teaspoons pure vanilla extract
2 extra-large eggs, at room temperature
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
1 1/2 cups chopped walnuts
1 1/4 pounds semisweet chocolate chunks, such as Nestle's

Steps:

  • Preheat the oven to 350 degrees. Grease and flour an 8 x 12 x 2 inch baking pan.
  • In the bowl of an electric mixer fitted with the paddle attachment, cream the butter, brown sugar, and granulated sugar on high speed for 3 minutes, until light and fluffy. With the mixer on low, add the vanilla, then the eggs, one at a time, and mix well, scraping down the bowl. In a small bowl, sift together the flour, baking soda and salt and with the mixer still on low, slowly add flour mixture to the butter mixture. Fold the walnuts and chocolate chunks in with a rubber spatula.
  • Spread the batter into the prepared pan and smooth the top. Bake for 30 minutes exactly. Don't overbake! A toothpick may not come out clean. Cool completely in the pan and cut into bars.

  • This recipe can be baked up to a week in advance, wrapped in plastic and refrigerated.

3 1/4 cups semi-sweet chocolate chips
3 extra-large eggs
1 cup sugar
1 tablespoon instant coffee granules

1/2 cup all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon kosher salt
1 cup chopped walnuts
2 -3 tablespoons heavy cream

Steps:

  • Grease and flour a 9-inch tart pan with removable sides.
  • Preheat the oven to 350 degrees F.
  • Melt the butter in a bowl set over simmering water.
  • Add 2 cups of the chocolate chips, remove from the heat, and stir until the chocolate melts.
  • Set aside to cool completely.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat the eggs, sugar, coffee, and vanilla on medium-high speed until light and fluffy, about 3 minutes. Stir in the cooled chocolate.
  • In a medium bowl, combine the flour, baking powder, salt, 1 cup of the chocolate chips, and the walnuts.
  • Fold the flour mixture into the batter until just combined.
  • Pour into the pan and bake for 35 to 40 minutes, until the center is puffed (the top may crack).
  • The inside will still be very soft.
  • Cool to room temperature before removing the sides of the tart pan.
  • Melt the remaining 1/4 cup of chocolate chips with the heavy cream and drizzle on the tart.

  • Preheat the oven to 350 degrees F
  • In a small pot over low heat, melt the butter and chocolate together until smooth. Add the Barefoot Merlot and whisk until fully incorporated and remove the pot from the heat.
  • • Add the eggs one at a time, and whisk to combine after each addition. Add the sugar and vanilla and stir to combine. Add the flour, cocoa powder and salt and stir until smooth
  • Transfer the batter into a 9x9 tin foil-lined baking pan and place it in the oven for 25 minutes and bake until done
  • While the brownies are baking, melt together the semi sweet chocolate and butter for the glaze. Once melted, whisk in the Barefoot Merlot and set aside
  • When the brownies are done, let them cool. Once cooled, drizzle the glaze over the brownies and spread it on top using an offset spatula

4 cups chopped Oreo cookies (50 cookies)

Steps:

  • Preheat oven to 350°.
  • Butter and flour an 11" X 17" pan (I used a 9 X 13 and had thicker brownies).
  • In a heat-proof medium bowl set over a saucepan of simmering water, heat butter, chocolate chips and unsweetened chocolate until melted and smooth. Allow to cool slightly.
  • In a large bowl, whisk eggs, coffee, vanilla and sugar.
  • Blend chocolate mixture into egg mixture; cool to room temperature.
  • In a medium bowl, sift together one cup flour, baking powder and salt.
  • Add flour mixture to chocolate mixture. In a small bowl, stir Oreos and remaining 1/4 cup flour.
  • Add Oreo mixture to chocolate mixture.

This is so incredibly rich and decadent. From the Barefoot Contessa's cookbook "Back to Basics," I am posting it here so I don't lose it. The inside will appear VERY underbaked - it is supposed to be that way, so don't keep on baking it! The number of servings are as noted in the cookbook, though I think it could serve far more.

1 cup unsalted butter
4 extra large eggs
2 cups sugar
3/4 cup cocoa powder
1/2 cup all-purpose flour
1 tablespoon vanilla
1 tablespoon framboise liqueur (optional)

Steps:

  • Preheat oven to 325 degrees.
  • Melt butter and set aside to cool.
  • Beat eggs and sugar together on medium speed until very light yellow and thick, about 5 minutes.
  • Sift cocoa powder and flour together, and add to sugar and egg mixture on low speed just until mixed.
  • Slowly pour in melted butter and mix again just until combined.
  • Grease a 9x12x2 baking dish (I used an 8x11), and spread mixture into the pan.
  • Place dish into a larger baking pan.
  • Add enough very hot tap water to larger pan to come halfway up the side of the smaller pan.
  • Bake for exactly 1 hour.
  • A cake tester inserted 2 inches from the side will come out 3/4 clean.
  • The center will appear very underbaked, IT SHOULD. The texture of this is between a brownie and pudding.
  • Cool, serve slightly warm or room temperature, with vanilla ice cream if desired.
