Steps:
- Using an 8-inch, non-stick skillet, melt butter over medium heat. Add beaten eggs. Add the eggs begin to coagulate, add the 3 cheeses evenly over the eggs. As cheese begins to melt, and before the eggs get brown, flip or turn egg mixture over. Continue to cook until the cheese melts. Turn omelette 1 more time. The finished omelette will be a nice yellow color with the cheese melted. Serve immediately.

- Heat oven to 200C/180C fan/ gas 6 and butter 4 small (about 200ml) ramekins. Sprinkle the parmesan into the ramekins, turning until all sides are covered. Place the milk and bay leaves in a large saucepan over a gentle heat and bring to the boil. Turn off the heat and leave to infuse for 15 mins.
- Discard the bay leaves, add the butter and flour, and return to a low heat. Very gently simmer, stirring continuously with a balloon whisk, for about 6 mins until you get a smooth, thick white sauce. Make sure that you get right into the corners of the pan to stop the sauce from catching or becoming lumpy.
- Once thickened, transfer the sauce to a large bowl and stir in the mustard powder, cayenne pepper, gruyère and egg yolks until fully combined.
- In a spotlessly clean bowl and with a clean whisk, beat the egg whites just until peaks begin to form.
- Carefully fold the egg whites into the cheese sauce in three stages making sure you fold, rather than stir, to keep the egg whites light and airy. Fill the prepared ramekins with the soufflé mix.
- Top each soufflé with a slice of goat's cheese, then place on a baking tray. Bake for 20-25 mins or until springy and well risen but cooked through.
- Leave to cool, then run a knife around the edge of each dish and remove the soufflés. If preparing in advance, place soufflés upside down (for neat presentation), on a tray. Cover tray in cling film. Chill for a few days or freeze for up to 1 month.
- When ready to re-bake, heat oven to 200C/180C fan/gas 6. Place the upside-down soufflés in a shallow baking dish, top with the remaining goat's cheese slices and pour over the cream (this stops them from drying out when baked for the second time). Cook for 8-10 mins until golden. Serve immediately alongside some simply dressed salad.

- In a small saucepan, melt butter over medium heat. Stir in flour until smooth; cook 1 minute. Gradually whisk in milk, mustard, salt and pepper sauce. - Preheat the oven to 350°. Butter and flour twelve 1/3-cup ramekins. In a medium saucepan, melt the butter over moderate heat. Whisk in the flour until smooth. Gradually whisk in the milk and 1 cup of the heavy cream until smooth; bring to a boil, whisking constantly, then reduce the heat to low and simmer, whisking, for 5 minutes. Remove from the heat and stir in the goat cheese. Scrape the sauce into a large bowl and let cool to room temperature, stirring occasionally.
- Beat the egg yolks into the sauce. Stir in the Roquefort and 1/2 cup of the Gruyère. Season with salt and white pepper.
- In a large stainless steel bowl, beat the egg whites with a pinch of salt until almost firm. Using a large rubber spatula, fold one-third of the beaten whites into the cheese sauce, then fold in the remaining egg whites just until blended. Gently spoon the soufflé mixture into the prepared ramekins, filling them three-fourths full. Set the ramekins on a rimmed baking sheet. Run your thumb around the rim of each ramekin to clean the inside.
- Bake the soufflés for 25 minutes, or until well risen and golden but not quite set in the center. Let cool, then invert the soufflés onto a large heatproof platter or into individual gratin dishes.
- Preheat the oven to 400°. Pour 2 tablespoons of the remaining heavy cream over each soufflé and sprinkle them with the remaining 1 cup of Gruyère. Bake the soufflés for 8 to 10 minutes, or until puffed and golden brown. If baking the soufflés on a platter, use a flat spatula to transfer them with their cream to plates, then serve.

- Use a 7" non-stick frying pan with an all-metal handle.
- Heat the broiler to its highest setting.
- Separate the eggs so the yolks are in a small bowl or ramekin and the whites in a clean large bowl.
- Be sure not to contaminate the whites with any yoke.
- Beat the egg yolks with a fork or small whisk and season well with sea salt and black pepper.
- Heat your pan to medium-low.
- While the pan is warming, whisk the egg whites until they form soft peaks.
- Add the olive oil to the pan and turn the heat up.
- Using a large rubber spoon spatula, fold the egg yolks, the cheddar cheese, half the Parmesan, and the chives into the egg whites.
- When the olive oil is hot, scrape and pour the egg mixture into the pan and smooth it out with the spoon spatula.
- Let the omelet cook for one minute.
- Then slide a thin spatula around the edges to loosen it, sprinkle the grated Swiss cheese all over the surface, and place the omelet under the broiler, about 4" from the heat.
- Let it cook for one more minute until the cheese is melted and slightly golden.
- Next, remove the pan from broiler heat and slide a thin spatula around the edge and under the omelet to loosen it.
- Hold the pan over your plate and, using a spatula, ease one half of the omelet onto the plate; then pull the pan gently over the top of the omelet portion already on the plate.
- If it breaks apart some, don't worry about it; it will still look beautiful.
- Sprinkle the rest of the Parmesan on top and serve.
- *Ifyou want to make the omelet for two, double everything.
- Use a pan with a bottom diameter of 9" or 10" and give each stage more time.
- When cooked, divide the omelet into two.
- Variation: Add a little chopped parsley and/or tarragon in with the chopped chives.

- Heat a 17 centimeter nonstick skillet over medium low, arrange your top oven rack about 15-20 centimeters below your broiler, and turn the broiler on to high.
- Meanwhile, separate your eggs by placing the yolks in a medium bowl and the whites into a very clean large metal or glass bowl. When separating your eggs, it is important to make sure that no yolk gets into your whites. Even the littlest bit of yolk or fat can stop your whites from whipping up.
- Using a clean metal whisk or hand mixer, whip up the egg whites until they are fluffy and hold soft peaks. Set those aside and whisk up the egg yolks with a bit of salt. The yolks need to be whisked for about ten seconds or so, just until they lighten up a bit.
- Using a metal spoon or large whisk, gently fold the yolks into the whites just until combined. The mixture will fall a bit and lose some of its fluffiness but be careful not to over stir as this will ruin the soufflé.
