BASIC SCONE RECIPE

Basic Scone Recipe image

A basic scone recipe for tender, moist, butter-y scones that are so quick and easy to make! Perfect as-is with just butter and jam, or you can get creative and add fruit, spices, or chocolate.

Provided by Allie {Baking A Moment}

Categories     Breakfast

Time 26m

Number Of Ingredients 6

2 cups all-purpose flour
1/3 cup granulated sugar
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
1/2 cup (1 stick) unsalted butter, cold
1/2 cup heavy whipping cream (cold)

Steps:

  • Preheat the oven to 375 degrees F and line a baking sheet with parchment.
  • Place the flour, sugar, baking powder, and salt in the bowl of a food processor, and pulse to combine.
  • Cut the butter into pieces, and add to the food processor.
  • Pulse the food processor until the mixture resembles coarse meal.
  • With the food processor running on low speed, stream in the cream.
  • When the dough has gathered itself into a ball, turn off the food processor and divide the dough into two equal portions.
  • Flatten each portion of dough into a disc shape, about 1 1/2-inches thick.
  • Score each disc into 6 triangles with a knife, and pull the triangles slightly away from one another (allowing about 1/2-inch in between).
  • Bake the scones for 14 to 18 minutes, or until set in the centers and slightly golden on the bottoms.

SIMPLE SCONES

Simple Scones image

Make a holiday breakfast -- or afternoon tea -- really special with these sweet bakery treats.

Provided by Ben S.

Categories     Bread     Quick Bread Recipes     Scone Recipes

Yield 8

Number Of Ingredients 9

2 cups all-purpose flour
⅓ cup sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
8 tablespoons unsalted butter, frozen
½ cup raisins (or dried currants)
½ cup sour cream
1 large egg

Steps:

  • Adjust oven rack to lower-middle position and preheat oven to 400 degrees.
  • In a medium bowl, mix flour, 1/3 cup sugar, baking powder, baking soda and salt. Grate butter into flour mixture on the large holes of a box grater; use your fingers to work in butter (mixture should resemble coarse meal), then stir in raisins.
  • In a small bowl, whisk sour cream and egg until smooth.
  • Using a fork, stir sour cream mixture into flour mixture until large dough clumps form. Use your hands to press the dough against the bowl into a ball. (The dough will be sticky in places, and there may not seem to be enough liquid at first, but as you press, the dough will come together.)
  • Place on a lightly floured surface and pat into a 7- to 8-inch circle about 3/4-inch thick. Sprinkle with remaining 1 tsp. of sugar. Use a sharp knife to cut into 8 triangles; place on a cookie sheet (preferably lined with parchment paper), about 1 inch apart. Bake until golden, about 15 to 17 minutes. Cool for 5 minutes and serve warm or at room temperature.

  • In a bowl, combine 1/3 cup sugar, flour, baking soda, and salt. Add grated butter into the dry ingredients. Use the large holes of a box grater to form big chunks of butter. Use your hands to mix the batter. You'll know it's done when it forms a coarse meal. Add the raisins (or dried currants).
  • Pour the sour cream mixture into the batter until you form dough clumps. With your hands, press the dough against the bowl to form a ball. Take note that the dough might seem sticky and liquid in the beginning, but don't worry, the dough will thicken nicely as you press it.

  • In a large bowl, whisk together the dry ingredients: flour, white sugar, salt, and baking powder. Using a box grater, grate the frozen butter. Add to the dry mixture and combine with a pastry cutter or pastry blender until the mixture comes together and forms crumbs. Set aside in the freezer while mixing the wet ingredients.
  • In a mixing bowl, whisk together ½ cup heavy cream, egg, and vanilla extract. Pour over the flour mixture, add any add-ins, then mix together until combined.
  • Turn dough onto a floured surface, and with floured hands, knead the dough into a ball shape; don't sorry if it's sticky. If the dough is dry, add 1 tablespoon of heavy cream. Shape into an 8-inch disc, transfer to a parchment paper-lined baking sheet, and cut into 8 wedges with a knife or bench scraper. Pull the wedges about an inch away from each other, making a larger disc shape.
