CHERRY TOMATO & BASIL FOCACCIA

Steps:
- In a small bowl, dissolve yeast in warm milk. In a large bowl, combine canola oil, sugar, salt, yeast mixture and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a stiff dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 45 minutes., Meanwhile, fill a large saucepan two-thirds with water; bring to a boil. Cut a shallow "X" on the bottom of each tomato. Using a slotted spoon, place tomatoes, a cup at a time, in boiling water for 30 seconds or just until skin at the "X" begins to loosen., Remove tomatoes and immediately drop into ice water. Pull off and discard skins. Place tomatoes in a small bowl; drizzle with oil., Preheat oven to 425°. Sprinkle 2 greased baking sheets with cornmeal; set aside. Punch down dough. Turn onto a lightly floured surface. Cover; let rest 10 minutes. Divide dough in half. Shape each into a 12x8-in. rectangle and place on prepared baking sheets., Using fingertips, press several dimples into dough. Pour tomato mixture over dough; sprinkle with basil, coarse salt and pepper. Let rise in a warm place until doubled, about 30 minutes., Bake until golden brown, 15-18 minutes.

BASIL BREAST OF TURKEY WITH PEAS AND GARDEN VEGETABLES
Steps:
- Lightly flour turkey breasts, shaking off the excess. In a large heavy skillet, heat the vegetable oil over moderately high flame. Add turkey breasts in 2 batches and saute, turning once, until brown. Remove from the skillet and keep warm.
- Wipe skillet clean and add 1 tablespoon olive oil. Add the onion and saute until onion is translucent. Add the butter, wine, peppers, zucchini and peas and saute for 2 minutes, then add chicken stock and bring to a boil. Reduce the heat and simmer sauce until well blended and thickened, for about 5 minutes.
- Return the turkey to the skillet and cook for and additional 5 minutes. Season with salt and pepper. Arrange 2 pieces of turkey on each plate and spoon the sauce and vegetables over them.
TURKEY AND VEGETABLE FOCACCIA SANDWICH
This might just be the best-dressed turkey sandwich you ever make-served on focaccia bread with an extravaganza of Italian-style vegetables.

- In a large bowl, combine 2 cups flour, yeast and salt. Add water and oil; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 4 minutes. Cover and let rest for 15 minutes. - Combine mayonnaise, garlic powder and 1/4 teaspoon black pepper in small bowl; set aside. Cut focaccia into 6 pieces. Cut each piece in half horizontally; set aside. Combine turkey, oil, garlic, basil, salt and remaining 1/4 teaspoon black pepper in large resealable plastic food storage bag. Seal bag; knead to combine. Add bell pepper and zucchini; knead to coat.
- Grill or broil turkey, bell pepper, and zucchini 4 inches from heat source 6 to 8 minutes on each side or until turkey is no longer pink in center. (Bell pepper and zucchini may take less time.) Top bottom half of each focaccia piece with mayonnaise mixture, tomatoes, bell pepper, zucchini and turkey. Top with focaccia tops.

FOCACCIA TURKEY BACON CLUB
I use a large foccacia loaf to make one big sandwich that can be sliced into appropriate serving sizes. My husband and son can have larger size sandwiches, while my daughter and I can have smaller sizes. I also use this recipe for entertaining, by making several large sandwiches and then slicing them into smaller size servings and securing with colorful toothpicks.

- Preheat oven broiler.
- Slice the foccacia bread in half horizontally so you have a top and a bottom piece. Place on a cookie sheet with the cut sides up.
- Mix the olive oil, garlic powder, and oregano in a small bowl. Brush each cut side of the bread round evenly with the oil mixture.
- Place under the broiler until the bread slightly browns (watch closely - this only takes a few minutes).
- Remove the bottom bread section from the cookie sheet. Place the provolone cheese evenly on the top bread section. Return to the broiler until the cheese is melted (again, watch closely). Turn off the oven.
- Finish building the sandwich on the bottom bread section by piling on the basil, avacado, turkey, and tomato. Add the top bread section, and slice into servings.
- I like to serve this sandwich as a meal with Italian chicken tortellini soup or tomato soup.

BASIL-TURKEY MINI FOCACCIA SANDWICHES
These are fabulous little sandwiches. These would be great at a shower, when you want to serve something a little different, but not weird.

Steps:
- Heat oven to 400°F.
- Grease large cookie sheet with cooking spray.
- Unroll pizza crust dough nad press into 12 x 8 inch rectangle on cookie sheet.
- With end of handle of wooden spoon, press indentations in top, about 1 inch apart.
- Brush dough with oil.
- Sprinkle with garlic powder, italian seasoning and parm cheese.
- Bake until golden brown (12 minutes).
- Cool off and cut in half horizontally.
- Spread cut side of bottom of focaccia with spreadable cheese.
- Top with single layer of tomatoes and basil.
- Layer turkey evenly over basil.
- Place top of focaccia cut side down, over turkey and press.
- Pierce through all layers with toothpicks, placing them every 1 1/2 inches over focaccia.
- With long serrated knife, cut between toothpicks into squares.
