Chunks of golden brown, crispy catfish! Serve with ketchup or tartar sauce.

2 pounds catfish fillets, cut into 1 1/2-inch pieces
2 tablespoons dried thyme leaves
1 cup spicy brown mustard
1 quart vegetable oil for frying
2 cups all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon baking soda

Steps:

  • Place the catfish pieces into a mixing bowl and sprinkle with thyme leaves. Toss until the catfish is evenly coated with the thyme. Mix in the mustard with your hands. Cover, and refrigerate overnight, up to 24 hours.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Whisk the flour, salt, black pepper, and baking soda together in a mixing bowl.
  • Dip the catfish pieces one at a time into the flour mixture and shake off the excess. Fry the catfish nuggets in batches until they are no longer translucent in the center and are golden brown, 3 to 4 minutes. Let the oil come back up to temperature between batches. Drain the nuggets on a paper towel-lined plate before serving.

2 cups vegetable oil
1 cup Gold Medal™ all-purpose flour
1/2 cup stone-ground cornmeal
2 tablespoons Cajun Creole seasoning
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon ground red pepper (cayenne)
1 egg
2 pounds catfish nuggets, skin removed
Salt
1/4 cup lemon juice

Steps:

  • In heavy 3-quart saucepan, heat oil over medium-high heat to 375°F.
  • In shallow dish, stir together flour, cornmeal, Creole seasoning, onion powder, garlic powder and red pepper. In another shallow dish, beat egg with fork until foamy.
  • Sprinkle catfish nuggets with salt and lemon juice. Dip each nugget into beaten egg, then roll in flour mixture to coat. Drop 4 to 6 nuggets at a time into hot oil. Cook 2 minutes; turn and cook 1 minute longer or until deep golden brown. Remove from oil; drain on paper towels.

2-3 catfish fillets
2 eggs..beaten, with a wee bit of milk
flour
breading crumbs..your choice
a little spice is nice..add to the batter
salt & pepper.....tarter, or yor favorite dip
oil for frying

Steps:

  • 1. Cut your catfish filet into bite size nuggets. ** TIP:I never buy the catfish nuggets packaged and sold in the store...!! NUGGETTS ????? I cut up my own...Then I know it is the best part of the fish! Wash and pat dry with paper towels.
  • 2. Put flour in one bowl. Beaten egg , with a little milk (very little)in another bowl. Bread crumbs,homemade cracker crumbs,or Panko in the third bowl.
  • 3. Dip the nuggets into the flour,then the egg wash, next the crumbs.Put on a plate. When the are all breaded ...put in the refrigerator for about 10-15 minutes.
  • 4. Heat the oil to a 350-370 temperature. Fry your nuggets 3 or 4 at a time...do not over crowd them. Drain on a rack over paper towels. Serve warm with dip of your choice. I use mayonnaise mixed with catsup. Salt and pepper..... and a salad on the side. Now enjoy to your heart content!!

1 cup all-purpose flour
1 cup cornmeal
1 tablespoon baking powder
1 tablespoon kosher salt
1/2 teaspoon cayenne pepper
1 (12-ounce) bottle amber beer
4 (6-ounce) catfish fillets
1 tablespoon salt
1 tablespoon cracked black pepper
2 tablespoons granulated garlic
1 lemon, juiced

Steps:

  • Preheat a deep-fryer to 350 degrees F.
  • In a large bowl, add the flour, cornmeal, baking powder, salt and cayenne and whisk to combine. Whisk in the beer, being sure to remove any lumps.
  • Cut the catfish fillets in half lengthwise to make 2 strips. If desired, cut into bite-sized pieces. In a small bowl add the salt, pepper and granulated garlic. Season the fillets with some of the salt mixture. Reserve the remaining salt mixture for another use.
  • Dip each strip in the beer batter and add to the fryer, a few at a time, moving them around so they don't stick. Fry until brown and crispy, about 3 to 4 minutes. Remove from the fryer to a serving platter. Repeat with the remaining fillets and season the fish with lemon juice.

1/2 cup milk
1/2 cup water
1 large egg, beaten
1 tablespoon sliced pickled jalapeno peppers, minced

1/2 teaspoon cayenne
Vegetable oil, for frying
1 1/4 pounds catfish fillets (about 4 fillets)
1 cup all-purpose flour
Spicy Tartar Sauce, recipe follows
1 cup mayonnaise
1 tablespoon sliced pickled jalapeno peppers, finely minced
1 tablespoon finely minced onion
1 garlic clove, finely minced
1 teaspoon hot pepper sauce
1/2 teaspoon lemon juice
1/4 teaspoon chili powder
1 pinch salt

Steps:

  • In a medium bowl, stir together hushpuppy mix, milk, water, egg, jalapenos, hot pepper sauce and cayenne; let stand 5 minutes.
  • Pour oil to a depth of 1/2 inch in a large deep skillet; heat oil to 350 degrees F.
  • Pat catfish fillets dry with paper towels, and cut into bite-size pieces. Dredge catfish pieces in flour, and then dip in hushpuppy batter mixture. Drop catfish pieces into hot oil, and fry, in batches, 3 to 4 minutes on each side or until golden. Serve with Spicy Tartar Sauce.
  • Stir together all ingredients in a medium bowl. Cover and chill until ready to serve.

1 1/2 lbs catfish nuggets
1 egg
1 cup buttermilk
1/2 cup white cornmeal
1/4 cup breadcrumbs
1/2 teaspoon salt
1/2 teaspoon paprika
1/2 teaspoon onion powder
1/4 teaspoon garlic powder
1/4 teaspoon cayenne
canola oil

Steps:

  • Scramble the egg in a large bowl then whisk in the buttermilk follow by the rest of the ingredients, except fish.
  • Heat 2-3 inches of oil in a large frying pan until hot. Dip the nuggets into the batter so they are coated then gently drop into the hot oil. Fry for 5-7 minutes, until golden brown & crispy.
  • Repeat until all the fish is fried. Place the fried fish onto a paper towel lined plate to drain excess oil.

Steps:

  • Wash catfish and pat dry with paper towels.
  • Cut fish into 1 inch cubes.
  • Place on paper towels and set aside while doing next step.
  • COMBINE: Flour, salt and baking powder in a bowl. Add milk, egg and butter; beat until smooth.
  • Heat 1 inch or more of oil in a skillet to 365 degrees on medium heat (be sure you allow oil temperature to come back to 365 degrees between batches).
  • Dip one fish cube at a time into batter, coating all sides. Place as many in the oil as you can fit WITHOUT crowding.
  • Fry until golden brown.
  • Drain on paper towels and serve immediately.
