A simple but delicious recipe for oatmeal muffins.

1 cup milk
1 cup quick cooking oats
1 egg
¼ cup vegetable oil
1 cup all-purpose flour
¼ cup white sugar
2 teaspoons baking powder
½ teaspoon salt

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease muffin cups or line with paper muffin liners.
  • In a small bowl, combine milk and oats; let soak for 15 minutes.
  • In a separate bowl, beat together egg and oil; stir in oatmeal mixture. In a third bowl, sift together flour, sugar, baking powder and salt. Stir flour mixture into wet ingredients, just until combined. Spoon batter into prepared muffin cups until cups are 2/3 full.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into the center of a muffin comes out clean.

1 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon salt
½ teaspoon ground nutmeg
⅓ cup vegetable oil
¾ cup white sugar
1 egg
¾ cup milk
¾ cup white sugar
1 teaspoon ground cinnamon
½ cup butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • In a large bowl, combine flour, baking powder, salt and nutmeg. In a separate bowl, beat together oil, 3/4 cup sugar, egg and milk. Stir egg mixture into flour mixture, just until moistened. Spoon batter into prepared muffin cups.
  • Bake in preheated oven for 20 to 25 minutes, until a toothpick inserted into a muffin comes out clean.
  • While muffins are baking, mix together 3/4 cup white sugar and 1 teaspoon cinnamon. While muffins are still hot, dip tops in melted butter and then in cinnamon sugar mixture.

1 cup rolled oats (not instant)
1 cup buttermilk
1 large egg
1/2 cup packed down brown sugar
1/2 cup unsalted butter, melted and cooled
1 cup flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 cup raisins (optional) or 1 cup chocolate chips (optional)

Steps:

  • In a large bowl, combine the oats, and the buttermilk and let stand for one hour (30 minutes will do if you are in a rush).
  • Preheat your oven to 400 degrees F, and line a muffin tin with 10 paper muffin cups.
  • Stir the egg and sugar into the oat mixture, followed by the butter.
  • Pile all the remaining dry ingredients together atop the mixture, then stir them into the batter until just combined.
  • Carefully fold in any add-ins without overmixing, which causes the muffins to be tough.
  • Divide the batter evenly among the the prepared muffin cups, then bake in the middle of your preheated oven for about 25 minutres, or until the muffins are firm and golden brown.
  • Let cool in the pan a few minutes, then transfer to a rack to cool further.

Steps:

The original recipe comes from a Bed and Breakfast Cookbook, but I've changed it to fit our preferences. It's very simple and gives great results. The recipe is easily halved if you have a smaller group to feed.

2 cups quick oats
1 3/4 cups whole wheat flour
1/4 cup wheat germ
1/2 cup packed brown sugar or 1/2 cup sucanat
2 tablespoons baking powder
2 teaspoons salt
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon allspice
1 1/2 cups milk
1/2 cup olive oil
1/2 cup applesauce
2 large eggs
1 cup dried currant (optional)

Steps:

  • Stir together dry ingredients (flour through allspice).
  • Beat remaining ingredients with fork, except currants. Add to dry ingredients and stir until just combined.
  • Stir in currants (if using).
  • Let batter sit 5-10 minutes.
  • Spoon into sprayed muffin cups and bake 20 minutes at 400 degrees, until golden and firm. Remove to rack to cool slightly, then serve warm.
