This pudding turns out in a lovely custard texture. A great balm for those seeking a return to some of the old-fashioned foods of their youth! We like it best because it is oven-baked and not made on the stove top.

2 eggs, beaten
4 cups milk
½ cup white sugar
½ cup uncooked white rice
1 tablespoon butter
1 teaspoon vanilla extract
½ cup raisins
⅛ teaspoon ground nutmeg

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease a 2 quart baking dish.
  • Beat together the eggs and milk. Stir in white sugar, uncooked rice, butter, vanilla extract, raisins, and nutmeg. Pour into prepared pan.
  • Bake for 2 to 2 1/2 hours in the preheated oven. Stir frequently during the first hour.

3 1/2 cups full-fat milk (or use half and half cream)
2/3 cup sugar
1/2 cup long grain white rice
2 tablespoons butter
1/4 teaspoon salt
1 teaspoon unflavored gelatin
2 tablespoons light rum
1 teaspoon vanilla
1 cup whipping cream, unwhipped

Steps:

  • In a heavy-bottomed saucepan bring the milk to a boil over medium-high heat.
  • Stir in the sugar, rice, butter and salt; reduce heat, cover and simmer stirring occasionally until the mixture has thickened and the rice is tender (about 45 minutes).
  • Meanwhile in a small bowl sprinkle gelatin over 2 tablespoons cold water; let stand until softened (about 10 minutes) then stir into hot rice mixture followed by the rum and vanilla.
  • Chill the mixture uncovered until cool but not set (about 1 hour).
  • In a bowl using an electric mixer on high speed, whip the cream to soft peaks form; fold into the rice mixture.
  • Divide the pudding between glass bowls.
  • Chill until set (about 1 hour).

½ cup white rice
4 cups whole milk, divided
1 ½ cups white sugar
1 cup ghee (clarified butter)
2 teaspoons chopped cashews
2 teaspoons chopped pistachios
2 teaspoons chopped almonds

Steps:

  • Bring rice and 2 cups milk to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Mash rice with a spatula or in a blender until smooth. Add remaining 2 cups milk and cook until thick, about 10 more minutes. Stir sugar into rice pudding.
  • Slowly mix ghee into rice pudding, keeping the saucepan over medium-low heat, until pudding no longer sticks to sides of pan, about 5 minutes. Garnish with cashews, pistachios, and almonds.
