SOUR CREAM CHICKEN QUICHE

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Line a 9 inch pie plate with thawed pie crust. Keep in refrigerator until ready to fill.
- In medium frying pan, heat olive oil on medium-high. Add onion and green pepper. Cook three minutes, stirring frequently. Add flour and cook for two minutes, stirring frequently. Stir in chicken, salt, nutmeg and pepper. Spread this mixture over bottom of unbaked pie shell and top with Cheddar and Swiss cheese.
- Combine eggs, milk and sour cream, mix until smooth. Pour over chicken mixture.
- Bake in preheated oven for 20 minutes. Reduce temperature to 350 degrees F (175 degrees C) and bake 30 to 35 minutes until inserted knife comes out clean.

SINFUL SOUR CREAM CHICKEN
This was a staple in my family growing up. Being married now, my husband requests it all the time! Though it's not the healthiest, it's a quick and easy option for a weekday meal. Can be made with chicken thighs as well.

Steps:
- Melt butter in a skillet over medium heat; cook chicken in melted butter until browned completely, 2 to 3 minutes per side. Pour wine into the skillet, bring to a simmer, reduce heat to low, and continue cooking until the chicken is no longer pink in the center and the juices run clear, about 25 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove chicken from the skillet to a serving platter.
- Stir onion into the liquid remaining in the skillet; cook and stir until onion is tender, 5 to 7 minutes. Add sour cream to the skillet; stir until smooth. Season the mixture with salt and pepper; pour over chicken.

- Preheat oven to 350°. In a shallow bowl, combine first seven ingredients. Place bread crumbs in a separate shallow bowl. Coat chicken with sour cream mixture, then coat with bread crumbs., Arrange chicken on a rack in a foil-lined 15x10x1-in. baking pan. Bake, uncovered, 30 minutes. Drizzle with butter; bake 15-20 minutes or until juices run clear.

Steps:
- For crust, prepare as directed. Do not bake. Preheat oven to 400º.
- For filling, melt shortening in small skillet. Add green pepper and onion. Cook on medium high heat 3 minutes, stirring frequently.
- Add chicken and flour. Cook and stir 2 minutes.
- Spread in bottom of unbaked pie crust.
- Sprinkle with salt, nutmeg and black pepper.
- Top with cheeses.
- Combine eggs, milk and sour cream in medium bowl. Stir until smooth. Pour carefully over cheese.
- Bake for 20 minutes.
- REDUCE OVEN TEMP TO 350º. Bake 30 to 35 minutes or until knife inserted near center comes out clean. Do not overbake.
- Cool 10 minutes before cutting and serving.
