BLEND OF THE BAYOU
My sister-in-law shared this recipe with me when I first moved to Louisiana. It's been handed down in my husband's family for generations. It's quick to prepare, nutritious and beautiful. I've passed it on to my children, too. -Ruby Williams, Bogalusa, Louisiana

- Preheat oven to 350°. In a small saucepan, cook and stir cream cheese and 2 tablespoons butter over low heat until melted and smooth. , In a large cast-iron or other ovenproof skillet, saute onion, celery and green pepper in remaining butter until tender. Stir in shrimp, crab, soup, rice, mushrooms, garlic salt, pepper sauce, cayenne and cream cheese mixture., Combine cheddar cheese and cracker crumbs; sprinkle over top. Bake, uncovered, until bubbly, 25-30 minutes.

Steps:
- .Preheat oven to 450 degrees.
- Heat oil in medium ovenproof skillet over medium heat until hot. Add onion, bell pepper, and garlic.
- Cook 3 minutes, stirring occasionally.
- Add chicken and cook 1 minute. Add tomatoes, sausage and hot pepper sauce. Cook uncovered over medium low heat 5 minutes.
- While chicken is cooking, combine baking mix, thyme and black pepper. Stir in milk. Drop by heaping tablespoonfuls in mounds over chicken mixture.
- Bake 14 minutes or until biscuits are golden brown and cooked through and chicken mixture is bubbly.

BAYOU PIE CRUST
I got this from a friend in another cooking group, it sounds perfect for that special fall Apple pie.

Steps:
- Combine dry ingredients.
- Mix in shortening and cheese until mixture resembles cornmeal.
- This can be done in your food processor on pulse, or with a pastry cutter.
- Sprinkle one tablespoon of water at a time over mixture until dough is moistened and holds together.
- Handle lightly.
- Divide dough in half.
- Roll out on floured surface to a 12 inch circle.
- Makes a 9" double crust.
- For a single baked pie crust, bake at 375° for 12 to 15 minutes or until golden brown.
