- Make a bbq sauce by combining the brown sugar, ketchup, vinegar, Worchestershire sauce, salt, pepper, mustard, and onion powder together in a large bowl.
- Stir the chipped chopped ham in with the sauce.

- In a small saucepan, saute celery and onion in butter. Add the tomato juice, ketchup, brown sugar, lemon juice, Worcestershire sauce, mustard and hot pepper sauce. Bring to a boil. ULTIMATE HAM SANDWICH

- Spread Homemade Mayonnaise (recipe follows) on a thick slice of crusty white or rye bread. Top with Bibb lettuce, sliced tomato, thick slices of leftover ham, a few dill pickle slices and sliced cheddar cheese. Spread whole-grain mustard on another slice of bread, then close the sandwich.
- Whisk the egg yolk, vinegar and 1 tablespoon water in a medium nonreactive heatproof bowl (glass or ceramic). Fill a large bowl with ice water and set aside. Bring 2 inches water to a simmer in a saucepan over medium-low heat.
- Set the bowl with the yolk mixture over the saucepan (do not let the bowl touch the water). Slowly whisk until a thermometer inserted into the yolk mixture registers 150 degrees F, 4 to 5 minutes.
- Set the bowl with the yolk mixture in the ice water to stop the cooking; whisk just until the mixture is lukewarm (do not let it get cold).
- Put the bowl with the yolk mixture on a damp towel. Add 1/4 teaspoon salt. Combine the oils in a measuring cup. Whisking constantly, slowly drizzle the oil into the bowl in a thin stream until smooth and thick. If at any point the oil is not emulsifying into the mixture, stop adding the oil and whisk to combine before continuing. Whisk in 1 to 2 teaspoons water if the mayonnaise is too thick. Season with salt. Cover and refrigerate up to 4 days.

GRILLED HAM AND CHEESE SANDWICH

- To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
- Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
- Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.
PITTSBURGH BBQ HAM SANDWICHES
I haven't lived in Pittsburgh for 25 years, but everyone from there is familiar with a bbq chipped ham sandwich. Everyone also has their own recipe. Thought with the Steelers going on to another SuperBowl, I'd post my mother's recipe for BBQ ham sandwiches. In Pittsburgh, there is a deli called Isaly's. They are famous for their chip chopped ham. If you can find this, it's the best. If not, simply ask your deli to shave or chip their cheapest ham or whatever ham is on sale, like a cooked ham or something. You want it pretty much falling apart. This will do as a substitute. The person working the deli counter will hate you for having them shave the ham, as it takes a while, but just smile:) and say thank you. This site won't allow for me to enter chip chopped ham, but now you know what is meant:) My mother has been deceased for many years, so I can't ask her what she meant by a family-size ketchup. That's what the recipe called for. I imagine it was those glass bottled ketchups that use to be on every table, but I am unsure of the size. Sorry. I'm guessing it was the 14 oz size. Oh, and if you're making this for Superbowl Sunday, it has to be Heinz ketchup since that's from Pittsburgh:) Let me know if it works out. Go Steelers!

PITTSBURGH HAM BARBECUES
I grew up on these delicious, sweet, and tangy barbecue sandwiches made from chipped deli ham. This dish is a staple in Western Pennsylvania, although each family seems to have its own way of making them! It's a terrific last-minute meal. Chipped chopped ham is a pressed ham loaf sold at deli counters in the Pittsburgh area which is always chipped. If you can get Islay's Chipped Ham, that is the original and still the best for these sandwiches. Otherwise, just get any deli ham and have it chipped or shaved paper thin. Enjoy!

KATHY'S BBQ HAM SANDWICH
This recipe has been a favorite of our family for years. My children ask for it every holiday as a Christmas Eve or New Year's Eve after-supper snack. I like to slow cook this in a crock pot for about an hour or two. You can heat it on the stove to save time. This is best served on plain hamburger buns, but you can enjoy it on your favorite rolls if preferred. It is a messy sandwich, which is similar to a NC-Style BBQ, not thick so the sauce absorbs into the bun. The kids love it this way, so Enjoy!
