This was my mother's original recipe, but through the years I've changed is slightly. Now my four daughters enjoy making this family favorite. Before we retired, we raised hogs on a farm in Pennsylvania. I cooked a pork dish at least once a week then, and I still do today.

6 pork chops (1/2 inch thick)
1 tablespoon vegetable oil
3 cups cubed day-old bread
1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
1 cup chopped celery
1 cup chopped onion
2 garlic cloves, minced
1 egg, beaten
1/4 teaspoon poultry seasoning
1/4 teaspoon pepper
1/2 cup shredded cheddar cheese, optional

Steps:

  • In a large skillet, brown pork chops in oil. Place in an ungreased 13-in. x 9-in. baking pan. Combine bread cubes, soup, celery, onion, garlic, egg, poultry seasoning and pepper; spread over pork chops. Bake uncovered at 350° for 45-55 minutes. If desired, sprinkle with cheese and return to the oven for 5 minutes or until melted.

1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Pork
1 can (16 oz.) whole berry cranberry sauce
3/4 cup KRAFT Thick & Spicy Barbecue Sauce
2 Tbsp. brown sugar
1/2 tsp. dry mustard

Steps:

  • Heat oven to 350°F.
  • Cook chops in skillet on medium heat 4 min. on each side or until browned on both sides. Meanwhile, prepare stuffing in large saucepan as directed on package.
  • Place chops in 13x9-inch baking dish. Mix cranberry sauce, barbecue sauce, sugar and mustard. Add to stuffing; mix lightly. Spoon over chops.
  • Bake 30 min. or until chops are done (145ºF). Remove from heat. Let stand 3 min. before serving.

6 bone-in or boneless pork chops (2-1/4 lb.), 1/2 inch thick

Steps:

  • Cook onions and peppers in 1 Tbsp. of the oil in medium skillet on medium-high heat until crisp-tender. Remove from skillet; set aside.
  • Add remaining 1 Tbsp. oil and chops to skillet. Cook 8 to 10 minutes or until chops are cooked through, turning over after 5 minutes. Meanwhile, prepare stuffing as directed on package.

4 double thick bone-in loin end pork chops
1 cup salt
1 cup brown sugar
1 tablespoon black peppercorns
1 tablespoon mustard powder
2 cups cider vinegar, heated
1 pound ice cubes
1 1/2 cups cornbread, crumbled
2 tablespoons golden raisins
1/4 cup walnuts, roughly chopped
1/4 cup dried cherries, halved
1/4 cup buttermilk
1/2 teaspoon ground pepper
2 teaspoons fresh sage, thinly sliced
1/2 teaspoon kosher salt

Steps:

  • In a plastic container put the salt, sugar, peppercorns, and mustard powder. Add the hot vinegar and swirl to dissolve. Let mixture sit for 5 to 10 minutes to develop flavor. Add ice cubes and shake to melt most of the ice. Add chops and cover with brine. Refrigerate for 2 hours.
  • Remove chops from container and rinse. Cut horizontal pockets in each pork chop for stuffing. Combine rest of ingredients, and put into piping bag that is not fitted with a tip. Pipe each chop full with cornbread mixture. Grill the chops on medium high heat for 6 minutes on each side. Turn each chop 45 degrees after 3 minutes to mark.

  • On a flat surface, use a sharp knife to make a pocket inside each of the pork chops. In a mixing bowl, combine the ground pork, salt, cayenne, granulated garlic, black pepper, paprika, and green onions; mix well. Divide the pork mixture into 4 equal amounts and overstuff the mixture into the pocket of each pork chop. Mix all the rub ingredients together in a small bowl. Season each pork chop with the rub. Cover and refrigerate overnight to let the seasoning infuse into the chops. Preheat a grill or BBQ pit to 375 degrees F. Put the stuffed chops on the grill or BBQ pit. After 30 minutes, turn the pork chops over. After an additional 15 minutes, turn each pork chop over and begin basting each side with BBQ sauce. 1/2 pound bulk spicy pork sausage

1 cup applesauce
4 ounces pork stuffing mix, about 1 dry cup
2 tablespoons Dijon mustard

1/4 cup apple cider vinegar

1 tablespoon dried onion flakes

6 double-thick bone-in pork chops, about 12 ounces each
2 cups apple cider vinegar
1 cup light brown sugar, packed
1/2 cup sea salt
1 tablespoon dry mustard
1 tablespoon black peppercorns
1/2 gallon ice water
2 tablespoons unsalted butter
1 lb smoked spanish chorizo, diced
2 medium celery, finely chopped
1/3 cup dates, pitted and finely chopped
2 tablespoons shallots, finely chopped
1 tablespoon fresh parsley, minced
2 teaspoons fresh sage, minced
1/2 teaspoon smoked paprika
1 cup manchego cheese or 1 cup sharp cheddar cheese, shredded

Steps:

  • Marinating Time: 3 hours.
  • To brine pork chops: Bring vinegar, brown sugar, salt, mustard, and peppercorns to a simmer over medium heat, stirring to dissolve salt. Do not inhale fumes. Transfer to large, deep food-safe container. Let cool until tepid. Stir in iced water. Submerge chops in brine. Refrigerate for 3 hours, no longer.
  • To make stuffing: Melt butter in a large skillet over medium heat. Add chorizo and cook, stirring occasionally, until lightly browned, about 5 minutes. Add celery, dates, and shallot, and cook, stirring often, until celery is tender, about 5 minutes. Stir in parsley, sage, and paprika. Transfer to a bowl and let cool completely. Stir in cheese and season with salt and pepper.
  • Remove chops from brine, rinse under cold water, and blot dry with paper towels. Cut a horizontal pocket in each chop to the bone using a sharp knife. Spoon equal amounts of stuffing into each chop, and close each opening shut with wooden toothpicks. Do not overstuff the chops; you may not use all of the filling.
  • Prepare a medium fire in an outdoor grill. (For a gas grill, preheat to about 400ºF. For a charcoal grill, let the coals burn until covered with white ash and you can hold your hand about an inch above the cooking grate for 3 seconds.) Brush cooking grates clean. Grill pork, with the lid closed as much as possible, turning occasionally, until an instant-read thermometer inserted horizontally into the center of a chop reads 145ºF, about 15 minutes. Remove from the grill and let stand for 3 to 5 minutes.
  • Remove toothpicks and serve.
