BBQ PORK POTATOES IN THE SLOW COOKER



BBQ Pork Potatoes in the Slow Cooker image

Cook everything, including the baked potatoes, in the slow cooker for a delicious bbq dinner with lots of flavor and little effort.

4-6 russet potatoes
2 tsp olive oil
1/4 tsp salt
1/4 tsp pepper
1/4 cup brown sugar
3 tbsp tomato paste
2 tbsp Worcestershire sauce
1 tsp salt
1 tsp pepper
1 1/2 lb pork roast
1 red onion (sliced)
1 cup cheddar cheese (shredded)
6 tbsp sour cream
green onions (sliced, for garnish)

Steps:

  • Rub each potato with olive oil then sprinkle with salt and pepper
  • Wrap potatoes in parchment paper and set aside
  • In a small bowl, combine the sauce ingredients
  • Place the sliced onion in the slow cooker and top with the pork roast
  • Cover the roast with the bbq sauce on both sides
  • Set the potatoes on top of the roast, making sure the lid will close
  • Cover and cook on low for 8 hours
  • Carefully remove the potatoes and split them lengthwise most of the way through
  • Top each potato with pork and other desired toppings

16 ounces pork loin
6 medium red potatoes (in Skin)
1 lb raw carrot (1 bag of Baby Carrots)
1/2 cup barbecue sauce
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon chili powder
1 teaspoon brown sugar
salt and pepper

Steps:

  • Rinse loin with cool water.
  • Place all ingredients into crock pot.
  • Sprinkle loin with the garlic, onion, chili powders, brown sugar and salt n pepper.
  • Cover and cook on low for 8 - 10 hours.
  • Meat will be very tender and this makes a thin, but nice sauce. You can add more BBQ sauce when done to thicken sauce if desired.

This is so easy - just one dish to complete an entire meal. The pork and potatoes melt in your mouth! We also like to buy a seasoned tenderloin for a special meal, just follow the same directions and omit the garlic. My family loves this meal, especially my two small children.

1 (2 pound) pork tenderloin
2 cloves garlic, minced
6 potatoes, peeled and cubed
1 cup baby carrots
4 cubes chicken bouillon
1 cup water

Steps:

  • Place pork in the slow cooker and sprinkle with garlic. Arrange potatoes, carrots, and bouillon cubes around pork. Add water.
  • Cover and cook on Low until pork is slightly pink in the center and potatoes are tender, about 4 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).
