Since a co-worker shared this recipe with me, I seldom make steak any other way. It's an excellent entree for folks like my husband who really savor tasty meat, and it's earned me many compliments on my cooking.

1/2 cup soy sauce
1/4 cup canola oil
1/4 cup packed brown sugar
2 teaspoons ground mustard
2 teaspoons ground ginger
1 teaspoon garlic powder
1 to 1-1/2 pounds beef top sirloin steak (3/4 inch thick)

Steps:

  • In a shallow dish, combine the first six ingredients; add the steak and turn to coat. Cover and refrigerate for 8 hours or overnight., Drain and discard marinade. Grill steak, covered, over medium heat until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), 5-8 minutes on each side.

1/2 c. teriyaki sauce
2 cloves garlic, minced
2 tbsp. minced ginger
1/4 c. sliced scallions, plus 4 whole scallions

extra-virgin olive oil

1 tsp. Sesame seeds, for garnish

Steps:

  • Cut steak crosswise into 3 equal pieces.
  • In a large bowl, whisk together teriyaki sauce, garlic, ginger, scallions, and lime. Add the steak and toss so that the meat is fully coated in the marinade. Cover the bowl with plastic wrap and set in refrigerator for at 30 minutes and up to 2 hours.
  • After the steak has time to marinate, preheat grill (or grill pan) to medium-high and oil the grates.
  • Once hot, remove the meat from the marinade and place on the grill. Add scallions to the grill and brush with oil. Season both with salt and pepper. Cook steak for about 3 minutes per side (depending on the thickness) for medium-rare.
  • Remove steak from grill and transfer it to a cutting board. Cover with foil and let rest for 5-10 minutes. Slice the steak against the grain into thin strips.
  • Garnish with sesame seeds.

4 Sirloin Steaks - You can also Round or Flank Steak
1/4 cup brown sugar
1/2 cup Low Sodium Soy Sauce
1/4 cup rice wine vinegar
1/4 cup honey
2 tsp minced garlic
1/2 tsp ground ginger

Steps:

  • Whisk together all the marinade ingredients in a small bowl (all the ingredients except for the steak).
  • Cover the steaks with the marinade by placing them in a storage bag or bowl. Allow the steaks to marinade for at least 4 hours but you can also marinade over night.
  • Remove the steaks from your refrigerator 45-60 minutes prior to grilling to allow them to come to room temperature.
  • Heat grill to 400 degrees F.

1 medium red bell pepper, cut into julienne strips
1 medium zucchini, cut into 1/4-inch slices
1 can (14 ounces) baby corn nuggets, drained
1/4 cup water
4 cups uncooked fine egg noodles (8 ounces)
1/4 cup chopped fresh cilantro

Steps:

  • Cut beef with grain into 2-inch strips; cut strips across grain into 1/8-inch slices. Place beef in shallow glass or plastic dish. Mix barbecue sauce, teriyaki baste and glaze and vinegar; pour 1/4 cup of sauce mixture over beef. Cover and refrigerate at least 2 hours but no longer than 24 hours, spooning marinade over beef occasionally. Refrigerate remaining sauce mixture.

  • Stir in zucchini, corn, reserved sauce mixture and water. Cover and cook 2 to 3 minutes or until vegetables are crisp-tender.

1 lb skirt steak (or other steak of your choice)
2 tablespoons cooking oil (if cooking in frying pan)
1 1/2 tablespoons unsalted butter
1 shallot, minced
2 garlic cloves, finely minced
1 cup balsamic vinegar
2 teaspoons sugar
1/4 cup beef stock (can use chicken or vegetable stock, whatever you have on hand)
2 tablespoons soy sauce
1 tablespoon mirin

Steps:

  • To make the Balsamic Teriyaki Sauce, add the butter to a saucepot and set over medium-low heat. When the butter just starts to bubble, add the shallots and the garlic and cook for 3 minutes or until aromatics are soft. Watch to make sure you don't burn the shallots or garlic.
  • Pour the balsamic vinegar in and bring to a boil. When boiling, immediately turn the heat to medium-low and simmer, uncovered, for 15 minutes or until reduced by half. The balsamic should be think, glossy and coat the back of a spoon. Add the sugar, stock, soy sauce and mirin. Stir well and bring to a boil. When it reaches a boil, immediately turn the heat to low and let simmer for 5 minutes. Let cool and reserve 1/2 cup of the sauce for marinating and the remaining 1/4 cup for serving.
  • Place the steak and just 1/2 cup of sauce in a large sealable plastic bag. Marinate 2 hours or overnight in the refrigerator. Thirty minutes prior to grilling, remove steak from refrigerator and let it sit at room temperature. Discard the marinade and pat the steak very dry.
  • Grilling outdoors. If you're grilling outdoors, preheat the grill for direct grilling over high heat. Grilling in pan or stovetop: If you're cooking the steak on the stovetop, set a large frying pan or griddle over high heat. When a bead of water sizzles and evaporates upon contact, add the oil and swirl to coat.
  • Add the steak to the hot grill or pan in one layer. The pieces should not be touching. Cook for 3 to 5 minutes on each side for medium-rare. Skirt steak varies in thickness, so you might want to add the thicker pieces to the grill or pan first and give them an extra minute head start.
  • Let the grilled skirt steak rest for 5 minutes, then cut across the grain for ultimate tenderness. Pour the remaining 1/4 cup of the Balsamic Teriyaki Sauce over the meat.

4 - 1 1/2-inch thick (2 pounds) filet mignon steak
1 teaspoon salt
1 teaspoon black pepper
2 tablespoons vegetable oil
1 1/2 tablespoons unsalted butter
1 shallot, minced
2 cloves garlic, finely minced
1 cup balsamic vinegar
2 teaspoons sugar
1/4 cup Progresso™ beef flavored broth (from 32-ounce carton)
2 tablespoons soy sauce
1 tablespoon mirin (sweet rice wine)

Steps:

  • Preheat the oven to 450°F. Season the filets with salt and pepper on both sides. Let the filet mignon rest at room temperature for 20 minutes. While the steaks are resting prepare the Balsamic Teriyaki Sauce.
  • In a sauce pan, melt the butter until bubbling. Add shallots and garlic; cook for 3 minutes or until the aromatics are soft and sweet (watch to make sure you don't burn the shallots or garlic). Add the balsamic vinegar; bring to a boil. Once boiling, reduce the temperature. Simmer for 15 minutes until the sauce is reduced in half. The balsamic should be thick, glossy and coat the back of a spoon.
  • Add the sugar, broth, soy sauce and mirin. Stir well and bring to a boil. When it reaches a boil, immediately turn the heat to low and let simmer for 5 minutes.
  • Heat a large frying pan over high heat until almost smoking. Add the cooking oil and swirl to coat. Place the steak filets in the frying pan, not touching. Cook for 2 minutes, turn the steaks over and cook an additional minute.
  • Transfer the steaks to an ungreased baking sheet; place in oven. Cook for 4-6 minutes; depending on desired degree of doneness. For medium-rare, the internal temperature of the filet mignon should read 140°F-150°F. Remove to a plate and let rest for 5 minutes before serving. Serve with balsamic teriyaki poured over the steaks.

1 -2 onion, sliced into rings
1 piece eye steak fillet, about 1 inch thick
1 tablespoon sake
2 tablespoons mirin
2 tablespoons soy sauce

  • Lightly salt the steak and set aside for 10 minutes.
  • Fry the onions in 1 tablespoon of the oil in frying pan; remove and set aside, keeping warm.
  • Add rest of the oil to pan and heat. Pat the meat dry with paper towels and add to pan. Cook til medium rare, about 2 minutes each side; there should be pink in the middle.
  • Remove from pan and set aside, keeping warm.
  • Reduce heat to low, add sake to pan and let bubble for 30 seconds, then add mirin, sugar and soy. Stir well and simmer for about a minute.
  • Slice meat thinly and arrange on top of rice with onions; spoon sauce over.
