This is a great BBQ Turkey recipe. We almost never have any leftovers. This recipe can be used with almost any size bird.

2 cups butter, divided
1 (15 pound) whole turkey, neck and giblets removed
¼ cup chicken soup base
3 sweet onions, peeled and cut into wedges
5 apples, cored and cut into wedges
2 tablespoons minced garlic, or to taste
1 (750 milliliter) bottle dry white wine

Steps:

  • Preheat a gas grill for low heat.
  • Rub some of the butter all over the turkey, inside and out, then rub all over with chicken base. Cut remaining butter into cubes and toss with onions, apples, and garlic in a large bowl. Stuff the bird with this mixture and place in a disposable aluminum roasting pan. Fold the turkey skin around the neck area to cover the hole and then turn the turkey over and pour wine into the opening at the other end until the turkey is full or the bottle is empty. Set the turkey breast side up.
  • Place the roasting pan on the grill and cover loosely with aluminum foil. If you have a pop up timer or heat safe meat thermometer, insert it into the turkey breast. Close the lid.
  • Roast until the temperature in the breast reads 170 degrees F (75 degrees C) and the temperature in the thickest part of the thigh reads 180 degrees C (80 degrees C), about 4 hours depending on the temperature of your grill. When the temperature is getting close, remove the aluminum foil covering the turkey and allow it to brown during the final minutes of cooking. If it starts to brown too much, just cover it back up. Allow the turkey to rest for at least 20 minutes before carving.

1 cup ketchup
1 cup water
1 tablespoon brown sugar
1 tablespoon cider vinegar
¼ cup sweet pickle relish
1 tablespoon Worcestershire sauce
¼ teaspoon ground cinnamon
1 pinch ground black pepper
1 pinch garlic salt
½ teaspoon liquid smoke flavoring
1 pound chipped ham
6 hamburger buns

Steps:

  • In a large saucepan, combine the ketchup, water, brown sugar, cider vinegar, sweet pickle relish and Worcestershire sauce. Season with cinnamon, black pepper, garlic salt and liquid smoke. Bring to a simmer over low heat and simmer for 20 minutes.
  • Shred the ham and stir into the mixture. Simmer longer if desired, then serve hot on hamburger buns. The mixture can also be frozen.

2 pounds thinly sliced deli ham
1 cup water
1 cup ketchup
1/4 cup packed brown sugar
1/4 cup Worcestershire sauce
2 tablespoons white vinegar
2 teaspoons prepared mustard
12 hamburger buns, split and toasted

Steps:

  • Place ham in a greased 3-qt. slow cooker. In a large bowl, combine water, ketchup, brown sugar, Worcestershire sauce, vinegar and mustard; pour over ham and stir well. Cover and cook on low until heated through, 4-5 hours. Serve on buns.

4 slices rustic Italian bread, lightly toasted
1/4 cup Hellmann's® or Best Foods® Real Mayonnaise
1/4 cup barbecue sauce
2 cups sliced deli turkey breast or leftover turkey
6 slices crisp-cooked bacon
1 cup shredded Monterey Jack cheese (about 4 oz.)

Steps:

  • Arrange bread on baking sheet.
  • Combine Hellmann's® or Best Foods® Real Mayonnaise with barbecue sauce. Spread 1/2 of the mayonnaise mixture on bread. Toss turkey with remaining mixture. Arrange turkey on bread, then top with bacon and cheese.
  • Broil 1 minute or until cheese is melted.
  • Tip: To add sauteed mushrooms, melt 1 tablespoon I Can't Believe It's Not Butter!® Spread in 12-inch nonstick skillet and cook 1 package (10 oz.) sliced mushrooms, stirring occasionally, 6 minutes or until golden. Season with salt and pepper to taste, then add to sandwiches before adding bacon and cheese.

1 cup flat leaf parsley, chopped
1 tablespoon salt
2 teaspoons black pepper
2 teaspoons chili powder
1/2 cup butter, softened
13 lbs whole turkey
4 cups chicken stock
1 large onion, roughly chopped
1 large carrot, roughly chopped
3 oranges, quartered

Steps:

  • Combine garlic, parsley, salt, pepper, chili powder, and butter.
  • Clean turkey. Separate skin on turkey. Smear butter mixture on turkey, inside and out.
  • Quarter oranges and insert in turkey.
  • Put 2 cups broth, onions, and carrot in roasting pan. Place turkey on roasting rack in pan. Grill over indirect medium heat until done, about 3 hours.
  • When done, let rest for 30 minute and then carve.

Cheddar, Double Gloucester etc. Preparation time includes 2 hour chilling time. Escalopes= A French term meaning a "very thin", boneless slice of meat such as: veal, pork, turkey, or salmon. Escalopes are thinner from using a meat mallet or rolling pin to thin out. The cooking time is very short because they are so thin. REGION: France.

700 g turkey escalopes (1.5 lb)
8 slices cooked ham (thin slices)
100 g cheese (4 oz)
30 ml creamed horseradish (2 teaspoons)
salt
pepper
29 ml plain flour (4 Tablespoons)
1 egg (beaten)
90 ml dried breadcrumbs (6 Tablespoons)
vegetable oil
lime slice (to garnish)

Steps:

  • But your turkey into 16-18 pieces.
  • Lay it onto a sheet of cling-film or greaseproof paper, cover with another sheet of same and use your rolling pin or a meat tenderizer to roll or bash them really thin.
  • Cut each of the slices of ham in half and cut the cheese into 16-18 little rectangular blocks.
  • Wrap the cheese blocks with the ham, making sure that you have a small amount of horseradish and seasonings inside with the cheese.
  • Wrap up your little ham bundle in a piece of the turkey, using a cocktail stick to secure firmly.
  • Mix the egg, flour and breadcrumbs together.
  • Coat the turkey bundle in the egg mixture and chill in the refrigerator for 2 hours.
  • Brush with plenty of oil and BBQ or grill them for approximately 8 minutes each side.
  • Garnish with lime slices and serve hot.
