SAUSAGE, BEAN AND SWEET POTATO SOUP



Sausage, Bean and Sweet Potato Soup image

This hearty soup recipe is made with spicy Italian sausage, white beans, sweet potatoes and kale. Perfect for a busy weeknight dinner recipe!

3 Italian sausage links (casings removed sweet or spicy)
1 medium onion (diced)
2 medium carrots (peeled and diced)
2 cloves garlic (grated)
1 teaspoon dried oregano
8 cups Low Sodium Organic Chicken Broth
2 medium sweet potatoes (peeled and cubed)
15 ounce Cannellini Beans (drained and rinsed)
4 cups torn kale
salt and pepper to taste
shaved parmesan cheese (to serve optional)

Steps:

  • Heat a large soup pot over medium-high and spray with cooking spray. Cook sausage until golden brown, stirring frequently, about 8-9 minutes. Remove sausage from pan and set aside.
  • To the same pan with the sausage drippings, add the onions and carrots. Cook until translucent, about 6-7 minutes.
  • Stir in garlic and oregano and heat for another 30 seconds until fragrant.
  • Pour in the chicken broth and return cooked sausage to the pan. Use a wooden spoon to scrape up any browned bits from the bottom of the pan. Bring entire pot to a boil then add in the sweet potatoes and beans. Return to a boil then reduce to simmer. Heat until potatoes are tender, about 10-15 minutes.
  • Right before serving, stir in the kale and cook until bright green, about 3-4 minutes. Season with salt and pepper to taste.
  • Serve in large soup bowls with shaved parmesan cheese if you wish.

2 bacon strips, diced
1/2 cup chopped onion
1 cup thinly sliced halved fresh carrots
1 cup cubed peeled potatoes
3 cups water
8 ounces smoked Polish sausage, halved and thinly sliced
2 cups frozen cut green beans, thawed
1 can (15 ounces) cannellini beans, rinsed and drained
1/2 cup minced fresh parsley
3/4 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon minced fresh marjoram or 1/8 teaspoon dried marjoram

Steps:

  • In a large saucepan, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels to drain. Saute onion in drippings until tender. Stir in carrots and potatoes; cook for 2 minutes. Add water; bring to a boil. Reduce heat; cover and simmer for 9-12 minutes or until vegetables are tender. , Stir in the sausage, green beans, kidney beans, parsley, salt, pepper and marjoram; heat through. 1 large yellow onion, diced large
2 cloves garlic, minced
Salt and pepper
3/4 pound sweet Italian sausage, casings removed
2 sweet potatoes (1 pound total), peeled and diced medium
4 cups chicken broth
3/4 cup small pasta shells
4 cups roughly chopped mixed greens, such as kale and Swiss chard
Grated Parmesan, for serving

Steps:

  • In a large pot, heat oil over medium-high. Add onion and garlic and cook until onion is translucent, about 6 minutes; season with salt and pepper. Add sausage and cook, breaking up meat with a wooden spoon, until browned, about 5 minutes.

1 (15 ounce) can great northern beans, drained

  • Heat olive oil in a large pot over medium-high heat. Add hot sausage, mild sausage, salt, and pepper; cook, breaking up sausage with the back of a wooden spoon, until no longer pink, about 5 minutes.

3 tablespoons extra-virgin olive oil, divided
1 10- to 11-ounce fully cooked smoked Portuguese linguiça sausage or chorizo sausage, cut crosswise into 1/4-inch-thick slices
2 medium onions, chopped
2 large garlic cloves, minced
2 pounds red-skinned sweet potatoes (yams; about 2 large), peeled, quartered lengthwise, cut crosswise into 1/4-inch-thick slices
1 pound white-skinned potatoes, peeled, halved lengthwise, cut crosswise into 1/4-inch-thick slices
6 cups low-salt chicken broth
1 9-ounce bag fresh spinach

Steps:

  • Heat 2 tablespoons oil in heavy large pot over medium-high heat. Add sausage; cook until brown, stirring often, about 8 minutes. Transfer sausage to paper towels to drain. Add onions and garlic to pot and cook until translucent, stirring often, about 5 minutes. Add all potatoes and cook until beginning to soften, stirring often, about 12 minutes. Add broth; bring to boil, scraping up browned bits. Reduce heat to medium-low, cover, and simmer until potatoes are soft, stirring occasionally, about 20 minutes. I received this in a email from Whole Foods Market. This is a great, simple soup that is very quick to make. Makes an easy weeknight dinner that is hearty and delicious. I used Aidells portobello mushroom sausage when I made this. I also use Herbamare seasoning instead of salt and pepper.
