1/2 pound lean ground beef (90% lean)
1 can (8-3/4 ounces) whole kernel corn, drained
2/3 cup condensed cream of chicken soup, undiluted
1/2 cup shredded cheddar cheese, divided
1/3 cup 2% milk
2 tablespoons sour cream
3/4 teaspoon onion powder
1/4 teaspoon pepper
2 cups frozen Tater Tots

Steps:

Preheat oven to 375°. In a large skillet, cook beef over medium heat until no longer pink. Stir in the corn, soup, 1/4 cup cheese, milk, sour cream, onion powder and pepper., Place 1 cup Tater Tots in a greased 3-cup baking dish. Layer with beef mixture and remaining Tater Tots; sprinkle with remaining cheese. Bake, uncovered, until bubbly, 20-25 minutes.

2 teaspoons olive oil
1 small onion, diced
20 ounces ground turkey (16 oz. of turkey or beef is fine)
1 teaspoon chili powder
1 teaspoon hot sauce
1/2 teaspoon kosher salt
1 cup frozen corn (or 10 oz. can whole kernel corn, drained)
1 (15 ounce) can pinto beans, drained
1 cup barbecue sauce
1 cup shredded cheddar cheese or 1 cup Mexican blend cheese
28 ounces frozen tater tots

Steps:

Preheat oven to 400 degrees F. Spray a 9x13" baking dish with cooking spray, and set aside.
Heat olive oil in a large skillet over medium-high heat. Add onion, ground meat, chili powder, hot sauce, and salt. Stir and cook until meat is almost cooked through. Stir in corn and drained beans, and cook a couple more minutes until hot.
Pour meat mixture into the prepared baking dish. Drizzle BBQ sauce over the meat, and spread shredded cheese over that. Arrange tater tots in an even layer over the top of the cheese.
Bake uncovered in preheated oven for 30-40 minutes until potatoes are golden brown. (I like to bake mine a little longer so the tots get pretty crispy on top.).
