- Heat oven to 350°F. In large bowl, beat sugar, butter, milk, almond extract and egg with electric mixer on medium speed until smooth. Stir in remaining ingredients. Drop dough by rounded tablespoonfuls about 2 inches apart onto ungreased cookie sheets.
- Bake 10 to 12 minutes or until almost no indentation remains when touched in center and surface is no longer shiny. Immediately remove from cookie sheet; place on cooling rack.

- Heat oven to 350°F. In a large bowl, stir cookie mix, oil, water and egg until soft dough forms. Stir in almonds. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet. Place 1 cherry on each cookie. Bake 8 to 10 minutes. Cool 1 minute before removing from cookie sheet.
- Meanwhile, in small microwavable bowl, microwave chocolate chips and cream uncovered on HIGH 30 to 45 seconds; stir until smooth. Spoon generous teaspoon on each cookie and spread over cookie. Allow chocolate to set until firmed; about 30 minutes.

Steps:
- Whisk together flour, cornstarch, baking soda, and salt in a medium bowl.
- Combine brown sugar, white sugar, butter, and shortening in a large bowl; beat with an electric mixer until light and fluffy. Mix in egg, vanilla extract, and molasses on low speed. Gradually add flour mixture and blend until just combined. Fold in chocolate chips, cherries, and pecans with a wooden spoon. Cover and place in the refrigerator until well chilled, at least 2 hours.
- Preheat the oven to 350 degrees F (175 degrees C). Line 2 cookie sheets with parchment paper or silicone mats.
- Roll dough into scant 1/4-cup-sized balls and place 2 inches apart onto baking sheets.
- Bake in the preheated oven until golden brown on the edges and slightly underdone in the middles, 12 to 14 minutes. Remove from the oven and sprinkle with sea salt. Cool on the baking sheet for 5 minutes, so cookies can continue to cook, before removing to a wire rack to cool completely.

- Heat oven to 190C/fan 170C/gas 5. Beat the butter, sugars and egg until smooth, then mix in the flour, chocolates and cherry pieces and ½ tsp salt. Spoon onto non-stick baking sheets in large rough blobs - you'll get 20 out of this mix. Make sure they are well spaced as the cookies grow substantially as they bake. The raw dough can be frozen.
- Bake for 12-14 mins until just golden, but still quite pale and soft in the middle. If baking from frozen, give them a few mins more. Cool on the sheets for 5 mins, then lift onto racks with a fish slice and leave to cool completely.

- Preheat oven to 375 degrees F (190 degrees C). Grease baking sheets. Whisk together the flour, baking soda, and salt; set aside.
- Beat the unsalted butter, butter flavored shortening, white sugar, and brown sugar with an electric mixer in a large bowl until smooth. - Combine flour, cocoa powder, salt and baking soda in a bowl. In a bowl of an electric mixer, or with a handheld mixer, combine butter and sugars until fluffy. Add egg, vanilla, and wine and combine. Slowly in batches add the flour mixture until just combined. Fold in the chocolate and cherries. On a nonstick cookie sheet, place a heaping tablespoon of dough for each cookie about 2 inches apart from each other. Bake 8 to 10 minutes, or until tops are still soft looking but edges look firm.
BECKY'S CHOCOLATE CHIP COOKIES
These are MY favorite chocolate chip cookies. I started with the Nestle Toll House recipe and changed it to a cookie that I like. Slightly crispy outside, but still soft and chewy. I have tried literally for years to find a recipe that my family liked.

- I use my Kitchen Aid stand mixer for this recipe. Cream together margarine, shortening, brown sugar, granulated sugar, and vanilla. Add eggs 1 at a time beating well after each. In a separate bowl, combine flour, salt, and baking soda. Gradually add flour mixture to other ingredients and beat well. Remove bowl from mixer and stir in chocolate chips. Drop by rounded teaspoonfuls 2" apart onto a baking sheet.
- Bake for 8-10 minutes at 375°F Remove cookies from cookie sheet almost immediately to cool on a kitchen towel or paper towels.

BECKY'S CHERRY AND DOUBLE CHOCOLATE CHIP COOKIES

- Preheat oven to 375° F Bring cherries, cherry liqueur, and 2 tablespoons of water to a boil in a small saucepan. Remove from heat and let soak 15 minutes. Drain cherries; pat dry. Whisk flour, salt, and baking soda in medium bowl. Using electric mixer, beat butter and both sugars in large bowl until creamy. Add eggs and both extracts and beat to blend. Add flour mixture and beat on low just to blend. Stir in cherries and all chocolate chips. Scoop tablespoonfuls of dough onto baking sheets, spacing 1" apart. Bake cookies until edges are light golden, turning baking sheets halfway through cooking. Total time cooking - about 13 minutes. Transfer cookies to rack and cool.
